Roasted Cauliflower & Garlic Soup with Dandelion Greens!

Adapted slightly from a @dianesanfilippo recipe from @21daysugardetox book!
It is not lost on me that my version isn’t the prettiest 🙈.
When you’re trying to use up extra veggies and greens so they don’t go bad, sometimes the soup is a weird green color 🤷🏻‍♀️.
Roasting the cauli with garlic and coconut oil brings out the toasty flavor and it still comes through even when puréed 😋. For this batch I used dandelion greens, celery (including greens), onions and carrots along with the cauli and garlic.
I had the last of my dental work in (hopefully) a while this week so I puréed it, but you could leave it chunky 😋
💥To make it extra special, I drizzled some white truffle oil on top that I got at Olive Orchard Tasting Room in Rehoboth Beach, DE this summer! 💥

Crowding out. That’s what works for me when it comes to making healthy changes.

I started including juicing 🥤 into our morning routine & just like that, coffee ☕️ lost its place in the lineup (I’m still mourning 😭 that a bit, but overall the caffeine wasn’t working for me).

I started to read before bed for 10 minutes or so, and BAM 💥. I read two ✌🏻 books in a week & am considering starting an online book club 📚 🤣.

We started diffusing oils & lost the need to burn candles “just because.” The oils actually DO something to support our bodies & move us into abundant wellness vs suppressing our bodies with toxic ingredients wafting 💨through the air.

What are you dying to try but can’t seem to find the time? Do it anyways! It will find a way to push out something that isn’t really a priority but may be a habit. Before you know it, the little choices will be making a big difference!

A mi no me gusta imponerle a nadie lo que debe o no comer, en realidad, así lleves una dieta que sabes que no está alineada con tus metas en vez de tratar de eliminar comidas, haz lo contrario, agrega nuevas opciones!!😏

Sucede que cuando empezamos a hacer un cambio en nuestra alimentación queremos eliminar todos los malos hábitos de una sola vez y si tú estás acostumbrado a comerte una barra de chocolate todas las tardes luego de terminar de trabajar, no sólo estás acostumbrados a eso sino que existe un vínculo EMOCIONAL enlazado a ese momento, lo ves como una recompensa, un alivio, un momento de compañía, paz y sensación del deber cumplido, si de la noche a la mañana quitas eso de tu vida lo que puede suceder es que entres en crisis, te pongas ansiosa, de mal humor, triste, sientas que le falta algo a tu vida, te deprimes, etc. La clave está entónces en agregar hábitos nuevos y buenos a tu vida como por ejemplo el agua con limón en ayunas, 1 jugo verde al día, 30 min de cualquier tipo de actividad física, rezar o meditar, escribir afirmaciones, aumentar el consumo de grasas buenas, etc y ellos mismos se encargarán de ir excluyendo a los “no tan positivos” sin que tu te des cuenta! De repente llega un dia en el que dices: “Hoy ni me provoca ese chocolate” o a lo mejor hasta se te olvide porque el sentimiento que activaba esa urgencia ya no está o ya lo procesas de otra manera y a nivel físico, cuando incluyes jugos verdes en tu dia a dia vas limpiando tu organismo y aparato digestivo favoreciendo el balance de la flora intestinal lo que hace que bajen las ganas de comer de manera ansiosa.
Recuerda que todo cambio por muy pequeño que parezca requiere mucho de nosotros y nos toca soltar situaciones con las que tenemos un tipo de “relación”. Happy Monday! I wanted to talk to you today about the concept of “crowding out”. The idea is that you restrict nothing.. you can have as much of anything as you want, whenever you want. BUT, you focus on adding in MORE of what you know is good for you. So, more green vegetables, more real food, more water, you focus on getting so much more nutrition in every meal. That’s how you “crowd out” the bad. The more water you drink, the less you’ll desire to drink soda and coffee. If you’re full on healthy foods, maybe you won’t be as hungry for junk food. If you decide you still want a cupcake or a soda, you may see yourself only having half and then slowly over time not having any at all or only on rare occasions. This is food freedom. This is kicking the diet mentality right in its face. When you view yourself as a caretaker of your body and not as a drill sergeant, really amazing things happen. I’ll probably never cut out anything completely, but I eat a whole lot LESS junk than I used to thanks to crowding out the bad with the good. For the most part, my diet is made up of healthy and nutritious food. And, when I have a cupcake on my daughters third birthday, I don’t beat myself up and have guilt over it. I live in the moment and enjoy it, because I know I can have whatever I want. And, because of that I mostly want what’s good for me. 🌿 #crowdingout #wellnesswithashle

This was a vegetable record! It may not look like it, but there are NINE different types of vegetable in this Mexican inspired burrito bowl. It has all but one of the colors of the rainbow, but only because I took the picture before I added the purple sweet potato. So that would be 10!

I love to challenge myself to either to make vegetables be as exciting as the meat I’m replacing (here I used mushrooms and cauliflower and made it taste like chorizo) and how many colors or vegetables I can use.

Fresh mushrooms from the hills!! My MIL (Mom-in-law) brought these for her mushroom-loving DIL, from her trip to Darjeeling. My nanny (who is from this area) was super excited to see them and told me that this type is widely grown all over the area. I couldn't resist diving in right away!

I believe these are oyster (?) mushrooms and they were perfect simply stir-fried with onion, garlic, @leekumkeeusa light soya & mushroom oyster sauce, and then topped with scallions. Now that I think about it, I could have also sprinkled in some sesame seeds as well...next time!!
.
Bought in the local market, these were definitely not a commercial variety. Hence, my nanny forewarned that because this is "the real stuff", I shouldn't have too much the first time as it may take time for the tummy to digest it. Thank you Mala Didi for the advice!
.
The next day, she prepared a local version of the same mushrooms and we enjoyed having that as well. So much diversity and so much nutrition packed into these fungi!

There’s a concept calling “crowding out” that you might find beneficial.

Crowding out means you bring vegetables IN to your diet, and don’t worry about taking things OUT. The ultimate goal is to eat healthier all around, but you have to start somewhere. And sometimes starting small is the most sustainable way to do it. Meaning you’re more like to stick to it! And isn’t that what we really want at the end of the day?

So start by making a list of all your favorite veggies. Write this list on a piece of paper or white board, and put it on your fridge or somewhere you’ll actually pay attention to it every day. Get your brain more familiar with these veggies if they’re not currently a part of your daily diet.

Choose a veggie each week, and find a way to incorporate it into your meals as many times as you possibly can. When you get the hang of it, add another veggie, and another. And make sure to eat these meals BEFORE your indulgent foods, like bread and sweets.

Remember, we aren’t telling you to cut out the bread and sweets. We’re telling you to focus on the veggies. Eat those first. You’ll soon find that this one habit will eventually crowd your plate, and you’ll be too full and satisfied to reach for anything else.

And, yes, I’m not joking, the nutritional content of veggies really satisfy your gut and brain. Treats will eventually, easily become occasional rather than a daily expectation.

Super excited about this one! Jowar (Sorghum in english) belongs to the grass family and is the 5th most important cereal crop grown in the world.

Widely cultivated in India, this gluten-free millet packs a ton of nutritional benefits like protein, fibre, anti-oxidants, B-vitamins, folate, iron, phosphorus, and much much more. That means it can also support those dealing with diabetes, celiac, inflammation, IBS, etc. .
My first experiment with this wholegrain was "Baby Popcorn" (Vaanya/Vansh named it)! They loved the tiny kernels and truly enjoyed having this as a snack while getting some telly-time. Mommy was happy because its a fantastic alternative to GMO-corn.

In the villages, I'm told it's popped using traditional practices over the fire with sand, but I was just as successful in the kitchen with a deep, heavy pan and my stovetop! So much more to discover!

В психологии есть такое понятие как вытеснение, когда психика, защищаясь, "забывает" или вытесняет воспоминания и эмоции, которые причиняли слишком сильную боль.
Так вот, в питании, оказывается, тоже есть такая схема, работает столь же хорошо.
Вместо того, чтобы запрещать себе какой-то продукт, вы начинаете добавлять в рацион больше полезного, тем самым вытесняя ненужное.
Вот, как это случилось у меня - узнав о смерти близкого человека, я тут же ощутила желание съесть сладкое - реакция на потерю. Привычным решением было бы купить тортик или булочку - именно этого мне и хотелось. Но в этот раз я решила заменить торт горьким шоколадом или мёдом - эффект тот же, но вреда для организма существенно меньше.
Самое приятное, что вы при этом ничего себе не запрещаете, а с любовью выбираете вкусный и более полезный продукт. Забота о себе против запрета - кто победит? 😉

It's common in psychology, when you just forget the most painful moments but also works well as far as food is concerned.
The point is not to eliminate something you like from your diet but to add more healthy choices. In this way, you don't forbid, you crowd out.
Having recently lost a close friend, I immediately felt like eating something sweet. A cake or a cookie seemed to be my traditional choices but this time I decided to go for a piece of dark chocolate and honey. Same effect, less damage.
What I like most about it is that I don't ignore my feelings and treat myself with love at the same time.

I love leeks. They can add so much flavour to a dish. Did you know they're really easy to grow too? If you buy them with a little of the route still attached, pop it in a glass of water until the routes grow a little and the centre starts to grow. Then plant it in the garden.
