I feel like we’re gate crashing slightly...

I love salads but please don’t feel “healthy eating” just means salads. There’s a time for salads, a time for sandwiches, a time for ice cream, a time for nothing, a time for fruit, a time for cakes, etc.

Who knew you could microwave potatoes in 5min?! I suspect quite a few people actually but this is all news to me! 😁
.
The vegs were also cooked in the microwave (3min) and the sea bass was done in the oven - I’ve been told the kitchen is going to get all ripped out next week so this is it, microwave all the way from now on 😱
.
It hasn’t always been easy but after a month without a kitchen I don’t think we’re faring too badly. Not that it would be a problem but so far we haven’t had a take away. I have had one lunch in Waitrose and another in a little cafe in Budleigh but no other eating out surprisingly.
.
I wanted to see whether it was possible to eat well with little means and only basic kitchen equipments, so far so good! 🌟

When you realise that you’ve packed the ladle and all you have to serve soup is an ice cream scoop... 🤦‍♀️
.
I wasn’t feeling soup for lunch (it’s not THAT cold) but was out voted! So we bought some ready made @glorious_foods butternut squash soup and had that along with some @waitrose seeded baguette and cheese 🥖🍵🧀 I’m itching to cook properly I have to say. The microwave is handy but it’s not the same ☹️

Only eight weeks without a kitchen to go, I can do this!!

Two I made earlier...
.
I often make pizzas at home and I always make too much dough, on purpose, to make an extra pizza and freeze it.
.
Knowing that we’d have no means of cooking I made sure to have a couple in the freezer for a day like today when I just wanted food straight after work (we have the oven, until Monday).
.
One had a buckwheat base, lots of vegetables, mozzarella and feta. The other had no tomato sauce but ricotta instead and was topped with caramelised onions, peppers, courgettes and tomatoes- plus quite a bit of chilli 🌶️😬
.
Help yourself by making sure your freezer is well stacked with homemade meals that you get out when you’re short of time or simply can’t be bothered 🤗

When you’re hungry, it’s a good idea to go for a high protein meal, which will satisfy you for longer.
.
I found myself suddenly being hungry at lunchtime so this is exactly what I did: I added an extra turkey burger (made another time and frozen) and good chunk of feta to my salad.
.
A black coffee, a square of chocolate later and I’m now ready to take on the afternoon!

My stomach and I are back!
.
After giving myself a little pep talk and all the lovely messages and hugs I received, I’m feeling better! Thank you everyone 😘
.
I’ve got a really busy day today so it was a quick breakfast for me: Greek yoghurt, apple compote and homemade granola 😋
.
Apple compote, or stewed apples, have been shown to support gut health - ideal when yours has been tied in knots! 🤢
.
The stewing process concentrates the pectin in the apples, which is thought to have a protective role against inflammation 🌟
.
This is actually something I had in the freezer: before going on holiday at half term we had lots of apples left and I couldn’t bear to waste them, so I gently cooked them up with a bit of cinnamon (I kept the skin on for added fibre and vitamins) and then blitzed them in my @vitamixuk to end up with a very smooth purée 🍏
.
Everyone in the house loves it, we have it for breakfast and “pudding”, it’s naturally very sweet so it balances the tartness of the yoghurt perfectly 🍎
.
It just goes to show that some sayings aren’t quite as daft as they sound: an apple a day... 😉

So we reached the point in the build that I was dreading: when things go wrong and costs escalate. I knew it would happen and yet it hasn’t made it any easier.
.
My head knew how to respond by taking a step back and putting things into perspective but my stomach didn’t quite get the message. It has been tied in knots and has struggled to accept food.
.
We all deal with stress differently: some people can’t sleep, some people bury themselves in work, some people can’t stop eating, some people can’t eat etc.
.
Of course, I took my own advice and I did eat but without appetite or pleasure, just because I had to for my brain to function. And what a bore that is! Food should be about pleasure not just fuel!
.
That sick feeling has already started to ease off and I know it’ll soon go.
.
In the meantime, I’ve decided to share a picture not of food but of me enjoying sunny Devon where I have made my life with my family and where I’m surrounded by great friends because that’s what really matters, doesn’t it?!
.

Ok, that looks disgusting but it tasted really nice I promise!
.
It wasn’t an easy sell to the boys but even they realised that it tasted good (“ok” according to them) once you had your eyes closed 😂
.
This dinner was what my mum would have called a “frichti” or a mix of things that needs eating. There was half a tin of haricot beans, a pack of spinach that started to look a bit sad, some fresh corn, which I forgot to put on the bbq this weekend and some butternut squash and sweet potato, which I got delivered today but which needed to be eaten by tomorrow... 🤗
.
I made a tangy ricotta and pesto dressing to go with that and no it didn’t look good but it was the best I could do with little time I had and a microwave only 🤷‍♀️
.
Plus it was full of fibre, vitamins and minerals and it got the boys used to eating things, which may seem unappealing at first but are actually fine🌟

On Fridays at the boys’ school parents stay for a little bit in the morning and read stories to the kids.
.
The other day Pierre picked a book, I vaguely saw the word “cake” and thought it sounded great 😬
.
I opened the book, started reading and suddenly my heart sank: what was this?! A book on dieting for five years old?! .
I wanted to scream, stomp off to the headmaster’s and have it out. Instead, I carried on reading through gritted teeth.
.
The book, by the way, is The Large Family: A Piece of Cake, and is about Mrs Large suddenly deciding she is too big and that she needs to go on a diet.
.
I read through gritted teeth until I saw that Mrs Large’s eldest pointing out that “Perhaps elephants are meant to be fat”, and then my heart started to warm up and I relaxed. Yes!!!!!!!
.
Yes, elephants are meant to be the size of elephants and a great mistake would be to try and look like a gazelle!
.
And yet, that’s what so many people are doing. They are trying to go against their genes and be people they can’t be. No wonder they fail...
.
I love this book (you’ve got to read it!) because it illustrates so well what’s wrong with the diet and fitness industries: we all have to be the same and food is categorised as healthy but dull or naughty but delicious.
.
There’s no such thing as good or bad food.
.
Nutritious food can be incredibly tasty and food high in fat and sugar can be part of a balanced diet.
.
The worst thing you can do is think like Mrs Large, try to change who you are meant to be, starve yourself, punish yourself with exercise you don’t enjoy, bore on about health and then wake up at night to eat cake in secret.
.
That’s how disordered eating can start and most of my clients think like Mrs Large.
.

When I started this account I wanted it to be the true reflection of what I really ate, even if it wasn’t perfect. After all there are already many perfect accounts.
.
I was reminded of this tonight when I got back from swimming with the boys, who have been constantly arguing, hitting each and generally being vile. I was hungry, absolutely exhausted (am I anaemic?!) and had no idea what I was going to make for dinner.
.
I could barely think and so I ended up having something “on toast” again. I slapped up some ricotta on some sourdough, sprinkled some chopped cucumber and dotted the lot with smoked salmon and some rocket.
.
Pretty and ok but this isn’t what wanted: I wanted some vegetables, some chicken and a sauce perhaps. I wanted something prepared, not assembled. I wanted to sit at a table, not kneel down on a rug full of crumbs and god knows what else 😔
.
So yeah, not the best, not the worst and definitely not satisfied ☹️
.
See even “experts” aren’t perfect!
.
It isn’t a big deal: I won’t die of an excess of toast or lack of vegetables. I promise I’ll be ok 😉
.
Oh and by the way, no the kids didn’t eat smoked salmon on ricotta... but pasta with broccoli 🥦

My microwave adventure carries on and today I feel quite proud of myself for having successfully managed to make delicious scrambled eggs 🙌
.
Their was the potential for a smelly rubbery pile of eggs 🤢but I managed to avoid it by being super careful and only cooking them a minimal amount in short bursts 🌟
.
I’m super happy about that because I’ve been missing eggs a lot those last three kitchenless weeks. Eggs are such a great source of nutrients: protein, iron, vitamin A and fat especially 🥚🐓
.
They’re also really versatile as you can have them in so many ways! I do miss boiled eggs though and I can’t see that how that’s possible in the microwave 🧐
.
Does anyone know? Does Waitrose sell boiled eggs?!

Healthy eating ain’t starving baby!
.
I’m super hungry today (could it have something to do with the fact I had a small dinner last night? You decide 😉) and so I needed a plateful for lunch.
.
The tart came from my freezer by the way, it’s not something I’ve rustled up between clients 😂
.
The tart was made a few weeks ago with shallots, aubergines, courgettes and tomatoes AND, let’s not forget, all butter puff pastry NOT flaxseed or something cos a bit of puff pastry ain’t going to kill you despite what you may have heard 🤨

Rushed for time, little inspiration and yet pretty hungry...
.
This is my kind of fast food: things on toast. Except that I didn’t have any toast so I used giant matzo crackers instead.
.
One was just basic hummus cucumber and carrot and the other was tapenade, heritage tomatoes and cauliflower couscous.
.
Not the most balanced meal, I grant you but it made my tastebuds happy, it was quick, hit the spot and I’ll do better tomorrow.
.
Remember that balance is achieved over the long term, not a single meal 🤗

Microwaved homemade chicken curry!
.
I surprised myself with that one, I wasn’t sure it was going to work but it was more than ok!
.
I’m starting to understand the microwave, not all the functions (I only use three buttons!) but how to make a meal with it.
.
I use it in stages:
1- I cooked the chicken which had marinated in the curry paste.
2- I defrosted the spinach and squeeze the excess liquid.
3- I reheated a (delicious) @tildarice coconut rice.
4- I cooked the runner beans.
5- I added the yoghurt, cream and spinach to the curry and reheated that very quickly!
.
The finish was very nice, the chicken was perhaps a bit tough but I’m sure it was a lot better (and cheaper!) than a ready meal...

Testing the boys’ after school snack, just to make sure... 😬

I made another batch of cereal bars this morning at 6.30am - I had an idea last night and just had to try!
.
These are peanut and cocoa bars, they are super tasty and can made vegan if you wanted to.
.

Too hot for porridge, forgot to buy bread and I’m not waiting for Waitrose to open at 11am...
.
So, I dug our some bananas from the freezer and plonked them in my @vitamixuk
I then added a dollop of Greek yoghurt and a dash of vanilla. Whizz, whizz, whizz et voila!
.
I got a sort of slushy frozen yoghurt, which topped with some granola, gave me a refreshing breakfast, which was super nutritious but also felt a bit decadent 🤗
.
Looking forward to a proper day of rest 💚

BBQ unhealthy? Think again!
.
We had a late lunch/early dinner (a dunch?) and had a fabulous spread of sausages, burgers, chicken, pork, prawns, vegetables and halloumi skewers, roasted vegetables and zataar salad, fresh peas, beetroot and mozzarella salad, corn on the cob and olives 😋
.
It was both delicious and nutritious with lots of different textures, tastes and vitamins. Plus it was shared with friends over a few drinks and much laughter, which made it all the more special.
.

Exeter mess...

I made a nice looking breakfast this morning, you know insta friendly, but then as I messed it all up to eat I decided that that version was even prettier in all its messy glory.

We can be pretty all glamed up with nail varnish, straightened hair and mascara galore. But we can be equally pretty, if not prettier, make up free, with bed head and pyjamas.
.
Life’s messy and remember that not everything on instagram is real or as it seems, so be kind to yourself! 💚

When you make an amazing dinner in the microwave and that somehow the photos don’t appear on your phone 😱😠

I made cod on a bed of tomatoes, peppers, herbs, shallots and olive oil served with broccoli rice as well as brown rice and red quinoa.
.
When he first saw it Pierre was adamant he was going to eat none of it! 🤢After we pointed out that he would be rather hungry if he didn’t 😉he tried and ended up declaring that it was in fact “better than Waitrose food!” 😂
.
Since I’ve got no pics of our main, here’s our dessert: coconut and cranberry flapjacks 😋

Jazzed up leftover lunch... again! 🤗

I’ve got a super busy day today and the only way lunch was going to work was to rely on the leftovers from Monday night.
.
Lentils, spinach, butternut, sweet potato and feta salad pimped up with some beetroot and leaves (from a packet) and super sweet yellow tomatoes 🌈
.
Yum, yum, coffee and back to work 🙋‍♀️

What I did with a microwave and the help of ready prepared food from the supermarket: lentil, butternut squash, sweet potato, spinach and feta salad 🌱
.
I used a pouch of precooked Puy lentils from @merchantgourmet, which I just tipped in a salad bowl, a packet of cubed butternut squash and sweet potato from @sainsburys, which only needed 5min in the microwave, an entire bag of spinach, which I also wilted down in the microwave, about 2/3 of a pack of feta, some vinaigrette and a few leaves of fresh oregano 🍠🌱💛
.
I know I’ve got it easy so far because it’s hot but it does go to show that you don’t need fancy equipment to make simple nutritious meals 🤗💚

One of my least favourite fitness saying.
.
The person who made that one up might want to retake biology: sweat is mostly water and a small amount of minerals as well as lactic acid and urea.
.
Sweat has nothing to do with fat, hence why it’s pointless to try and lose weight by going to a sauna.
.
Even said in a “joking motivational way”, I don’t like it because it’s loaded with negativity.
.
Fat as being something we must get rid of. Fat as being something we have to cry about. Losing weight as something punishing. Exercising as a way to annihilate fat.
.
The thing is, we need fat. Yes, some people have too much but we can’t do without to be healthy.
.
Losing weight, if needed, doesn’t have to be painful.
.
Exercise should be done for enjoyment, not to compensate for food.
.
Don’t get sucked in by the hype! Eat a bit of everything, find some physical activity you enjoy and can see yourself doing on a regular basis, sleep enough and laugh a lot - that’s it!

Another day, another bowl cake...
.
This time I used nectarines that were a little too ripe and almonds because the two are a match made in heaven.

This little cake may not look like much but it packed a fibre punch with oats, chia seeds, almonds and nectarines 💛
.
Fibre is a nutrient most people don’t eat enough of and yet it’s crucial for digestion, blood sugar regulation, immune and also brain function!
.
What are you waiting for? Eat more fibre!

If it ain’t broke, don’t fix it!
.
Tomato, mozzarella, basil: you know you’re onto a winner with that one! Add a sprinkle of rocket and a scattering of olives and you have an amazing lunch!
.
A quick word on cheese: not it is not actual made by the devil, it won’t automatically make you fat or block your arteries, it is not more caloric when melted and, no, melted cheese doesn’t stick to the lining of your gut 🙄😂
.
Cheese is neither good nor bad, it’s just food 🧀
.
It’s food that is more dense in fat than say, broccoli, but it’s also food that it very low in carbohydrates and reasonably high in protein. It’s also a handy source of calcium and, personally, I also think it tastes really good.
.
So why systematically avoiding cheese and beating yourself up for eating it?!
.
Life’s too short, just eat cheese! 🤗

You’ve heard of the mug cake I’m sure but here I present to you the bowl cake.
.
It’s been super popular in France for ages but I never really tried it as the proper way of doing it is really in the microwave.
.
This morning was therefore a bit of an experiment but it worked super well. Even Gaspard thought it was delicious!
.
What you need is oats, some baking powder, an egg, a squirt of honey, frozen berries and a bit of milk to loosen the mixture. In the microwave for a couple of minutes et voilà! .
You can eat it hot or cold.
.
I reckon you’re going to see many variations of this breakfast in the next few weeks and yes, I promise I’ll put the recipe on my website! 💚

Not a lot of posting today, not because I didn’t eat but because I was far too busy embarrassing my kids on sports day 😬
.
Two “mums races” looking like I meant business - even did a little Rocky warm up just to make sure the boys got the message: sports day is about having fun!
.
Did people think I looked silly? Probably. Did I make a few laugh? Yes. Was it embarrassing to have people laughing at me? No. I made them laugh, that’s something! Did I have fun? Yes, bucket loads! It’s great pegging it at full speed like your a kid being chased by monsters!
.
What did my boys think? One was toe-curlingly embarrassed and the other thought I was the best... To be honest, I don’t care what they thought, all that matters is that they saw their mum not being scared of being who she is and not compromising to blend it.
.

What a good idea!
.
I wasn’t sure it would be enough but it was super filling!
.
Scotch eggs might not seem like an obvious healthy choice but provided it is made with good ingredients and that it doesn’t become part of your staple diet, it can make a great portable lunch.
.
You get protein, a bit of carbs (more in this one as it was a vegetarian one) and more or less fat depending on the variety. This one also had lots of fibre with thanks to the chickpeas, nuts and seeds 💚

Today was definitely an ice lolly kind of day... ☀️

In the summer I always have some ice lollies in the freezer to bring to the boys after school.
.
These were tropical ones with a cheeky slice of kiwi 🍍🥥🍈🥝 I only had four left so I also bought a load for our poor builders who were sweating away digging up the garden!

No, you don’t have to! There are many decent ready made products out there that you can rely on.
.
Tonight, I couldn’t face eating anything hot so instead I picked up a roast chicken and some Spanish tortilla from @waitrose
.
Eaten cold and served with some green salad and gherkins it was perfect: easy, delicious and nutritious! 🌟
.
Even without a kitchen you can eat well if you buy the right products.

Hurray! I managed to open the microwave! I even managed to produce a decent meal 🙌
.
It was harder than I thought though and I’m now getting why people buy “ready meals”...
.
I didn’t how long things would take to cook (and because we don’t envisage to keep the microwave we bought a secondhand one on Gumtree, which didn’t come with instructions 🙄), so I cooked everything separately, which was a bit of a faff.
.
The rice was easy and quite nice but, note to self, one pouch isn’t quite enough for four people.
.
The vegetables were also surprisingly easy and nice. Even with all the waiting around for everything to be ready, the weren’t over cooked 👍
.
The salmon however was a misery! Edible but so so over cooked! I actually thought it might explode in there 😂
.
Still, not bad for a first attempt 🤗
.
I wonder what I will produce tomorrow...

I was going to attempt scrambled eggs in the microwave but it’s soooooo hot I just couldn’t bring myself to!☀️

So it was a little rainbow salad of grated carrots, red cabbage, rocket and a chunk of ready made tortilla cubed up. Lots of water, vitamins and antioxidants 💦🥕🍆🥦🥚🌈

This had everything I needed: lots of fibre, some starch, some protein, fat and of course, taste! 😋

Have you ever felt guilty for not exercising or for doing less than you had intended? .
Have you ever found yourself doing “just a bit more” because you couldn’t possibly do less exercise than the previous day?
.
Have you ever ignored the fact that you were tired, ill or injured and carried on nonetheless?
.
If this sounds like you, you could have become a compulsive exerciser. .
Exercise is undeniably a good practice for our physical and mental health but there comes a point when it becomes deleterious and it is worth keeping that in check.
.
A month ago, when we were on holiday, I fell off a horse rather unglamorously on my bottom (let’s not mention I was the only experienced rider 🤦‍♀️). Anyway, I badly hurt my coccyx and was limping the first few days. When we got back I decided it was too painful to exercise, so I left it for a week. Then I tried a HIIT workout and had to abort the whole thing as I was in agony. After discussing it with GP friends who said it could take weeks to heal, I left it another week.
.
Today, a month later I last exercised, I have finally been able to workout pain free and it feels great! My body is ready now but it wasn’t before.
.
Listen to your body, pain and exhaustion aren’t your body’s way of being annoying, just signals that it needs rest.

Welcome to my new kitchen guys!
.
We’re having some major work done to our house and we’ve had to evacuate the kitchen. So for the next three months, this, and the fridge, is all I will have 😱
.
One of my first thoughts was of course, how am I going to keep my insta feed going?! I’m a panicker, you see. But then, after a few minutes of deep breathing (only kidding, I’m not that bad 😂) it occurred to me that this could become a great exercise: how to eat well without a kitchen? 🤔
.
I’ve got quite a few gadgets (too many according to my husband) and they help me tremendously in making tasty and beautiful food but what if you don’t have all this? Does that mean you are forced to live on ready meals?
.
I can tell you already that there will be some ready meals and takeaways but hopefully no more than usual. I’m going to attempt to show that you don’t need fancy equipment to eat well.
.
I haven’t owned a microwave since I left home, last century, and my friends would tell you that if I have to use theirs I tend to stand in front of it crying for help before I can even open the damn thing 🙄
.
So it’s fair to say that this is going to be an interesting experience...
.
There will be sweat, there will definitely be tears but hopefully not too much blood. .

Yesterday I met up with the lovely @shelleykellystyle to talk about body image, self care, food and fashion - all that in 90min, phew! We’re hoping to team up in the near future to help women feel better about themselves.

Shelley isn’t a regular stylist, she helps women find their own style because boring would it be if we all looked the same?!

I often see clients who try to blend in with the furniture, almost as an apology for their not-size-eight-shape, and who tell me that they’ll treat themselves I new clothes once they’ve lost the weight. What if you treated yourself to new clothes now?! What if you could feel better in yourself now by wearing something that made you feel great instead of a tent? What if that gave you an incentive to look after yourself better and perhaps even losing weight?

Last weekend we went for dinner round friends’. My heart dropped when I saw that for out starter we were having BBQed prawns because I don’t like them...
.
True to myself, I decided to fess up and tell my friends while at the same time I also decided to try them once more. .
After all, you sometimes have to try things many times before you like them, PLUS I believe in being congruent and following my own advice of “what’s the worst that can happen?”, PLUS prawns are incredibly good for you.
.
So I took a bite and, I’m sure you’ve guessed it, I loved it! I ended eating 15 or so delicious prawns!!
.
Inspired by this I had to buy some this week and tonight for dinner we had a lovely salad made with mango, prawns and halloumi.
.
The boys were pretty suspicious of the prawns at first but they too ended up liking them!
.
Prawns are now going to be a regular occurrence on our menu, thanks @franzferrari72 and @77kbf for making this happen!

We had a girls night in last night with @hanforrow @mixmixmama and two other lovely friends who we haven’t yet managed to convert to Insta...
.
I feel grateful to have such wonderful friends. When we moved here from London 6 years ago, I knew no one, I was newly pregnant and felt like dying, I had a toddler and didn’t even know where the city centre was, it was raining all the time and I was basically crying constantly thinking we had made a terrible mistake.
.
Then I met Hannah on Lucky Lane, followed by another bunch of lovely ladies and gradually I started feeling at home and the draw of London dissipated.
.
I wouldn’t live anywhere else now because Devon is magic, Exeter is like a big friendly village and that I have a wonderful circle of friends.
.

I’m about to not have a kitchen for 3 months (more on that later), so this week I’ve been busy making all sorts of things that I could freeze or put in the cupboards for later.

I’ve got a cake, two homemade pizzas, some sausages, some stew, some burgers tucked away in the freezer. I also made some baked custard pots (because the kids love them and that we had lots of milk to use up) and also a big batch of granola.
.
I’m intending on using the oven as much as possible this weekend, just because I still can 😬

It’s was a green kind of day I suppose...

How pretty and inviting are those green vegs?!

I remember standing at the greengrocer as a teenager while my mum was choosing her shopping and already then I was salivating. I loved that shop, the peace, the smells, the tranquil and reassuring voice of the lady...

That’s when I started loving vegetables, thanks to the beautiful produce of L’Epicerie des 4 saisons 💚
.
I didn’t know what to make for dinner tonight. I knew I wanted some greens but couldn’t choose which one so I had them all: rocket, Savoy cabbage, broccoli, asparagus, peas and broad beans.
.
Dolloped with some spicy ricotta and feta mix and sprinkled with some fresh oregano, this was delicious!

Can you tell I’m feeling hungry?!

For lunch I had a couple of sausages (I love the @sainsburys chicken, feta, spinach and peas), a boiled egg, a handful of spinach, cucumber, a perfectly ripe tomato, half and avocado and olives!
.
Did you know that our hunger isn’t the same from day to day?
.
Some days you might feel really hungry and some days not. Don’t fret, your body’s got it and knows what to do.

Did you know that the bread you froze and reheated in the toaster was processed differently by your body than fresh bread? .
When you freeze and reheat bread the starch molecules change and become harder to digest. This isn’t something that you would feel, you won’t find it “harder to digest” but it will have a measurable impact on your insulin response.
.
How cool is that?!
.
The same goes for most starch that you cook and cool down, hence why eating a baked potato might leave you feeling hungry shortly after while a humble potato salad fills you up very quickly. The starch in baked potatoes are digested very quickly, not dissimilarly to glucose, whereas the starch in your potato salad would have turned into resistant starch, which takes longer to digest.
.
Now you can takes it even further by reheating leftover pasta, which further increases the starch resistance...
.
I told you leftovers were the way forward, didn’t I?!!

“Mummyyyyyy, what’s for dinner?! I’m staaaaaaaarving!” is what I always get asked when I pick the boys up from after school club.
.
From then on, it’s a race for time because I know that if I don’t hungry the hell up I will have two hangry boys on my hands.
.
On such days, especially if I’ve been busy at work, I need all the help that I can get and today that meant relying on a precut stir fry mix and already diced tuna steak.
.
I quickly marinated the tuna in lemon juice, tamari, garlic, ginger and a splash of sesame oil before heading out. When I came back it was just a matter of heating the wok up, wacking the tuna in, opening the pack of vegs and adding some soba noodles at the last minute (they cook in 2min).
.
A glug of chilli sauce for the grown ups et voila!
.
Pierre was suspicious of the tuna and went from “I’m not eating that”, to “that’s not so bad” and finally “I don’t like it, I LOVE it” 🤣
.
I know that fresh vegetables (preferably organic) that you have cut up yourself at the last minute would be much higher in nutrients but sometimes one doesn’t have time. In fact I know lots of people who rarely have the time and instead rely on ready meals or take aways because they think “they may as well” since they are not going to use ultra fresh food.
.
Not being the best doesn’t mean the worst! Pre-prepared vegetables can be really handy and nutritious so don’t knock them.
.
Don’t make the best the enemy of good.

Rainbow lunch 🌈

Super speedy scrambled eggs with spinach, tomato salad and some amazing seeded bread I brought back from France.
.
Eggs are my go to ingredient when I’m in a rush: they are a good source of protein, iron, carotenoids, vitamin D and Bs.
.
Eggs are also versatile: hard, scrambled, poached, omelettes, dippy etc.
.
Last but not least, they only takes minutes to prepare.
.
Considering all this, it makes eggs very good value for money!

I’d like to tell you that I’m channeling my former student self here but let’s face it I didn’t eat pizza when I was a student! 🤦‍♀️

Anyhoo, although I really enjoyed my dinner yesterday, I got full quite quickly so I did that crazy thing that can be so hard to do: I left half of my dinner 😱
.
This wasn’t restriction btw, this was mindful eating.
.
Mindful eating is the art of eating when you are hungry and stopping when you are full.
.
Who here always finishes their plate because they were told to when they were young?

Small child went back to sleep, Mummy didn’t...

Pizza!!

Fridays often mean play date and homemade pizzas in our house.
.
The boys love pepperoni and I love one with vegetables and lots of chillis 🌶️
.
Not only are pizzas delicious, they can also be nutritious - we’ve got to stop thinking they are “bad” ❌
.
I made the dough with white and buckwheat flours for added goodness. I spread it very thinly. The cheese is a source of protein and calcium and there was lots of vegetables on there...
.
Perfect, if you ask me 👌

A little vegetarian plate for lunch: courgetti, rocket, tomato, olives, hummus and homemade falafels.
.
Since many ask, here’s the recipe for the falafels - this is the cheat’s version btw, not the real deal. The real deal is lovely but takes a lot more time and sometimes you just wanna eat!
.
☝️
1 tin chickpeas - drained and dried in a cloth
1 fat clove of garlic
1 handful of fresh parsley
1 tbsp. Ground cumin
1 tsp. Ground coriander
1 pinch cayenne pepper
1 tsp. Bicarbonate of soda
1 tbsp. Coconut oil
1 generous pinch of salt

Place everything in a food processor until mushy
.
Roll into balls the size of walnuts
.
Place on a baking sheet and in a moderate oven for 30min or so.
.
Quick, easy and nutritious

The kids are still asking for porridge in the summer now and again but I prefer overnight oats.
.
OO could be called summer porridge really: you get the nutrition and comfort of porridge but you’re not sweltering after and it’s even quicker to prepare, which means more time to sleep! 💤
.
Have you ever wondered what to do with that was almost empty peanut butter jar? There’s still some left but you can’t access it!! 🧐
.
Overnight oats is what you do: pour your oats in the jar, add some seeds, milk (in my case yogurt), do a little dance around the kitchen while you shake it and put it in the fridge and go to bed.
.
In the morning you will be rewarded with a creamy concoction that you can just pour in a bowl and to which you can add what takes your fancy.
.
I fancied banana today - we know banana and peanut butter works, right?!🍌 🥜
.
I’m all set for the day now. Got lots of things planned and a busy day so onwards I go!

Who said you could only “treat yourself” to an ice-cream at the weekend?!

You know who, don’t you?
.
It’s that voice in your head that has created so many rules: you must run for 30min exactly and if you go over you have to do another 30min, you can’t eat if no one else is eating even though you’re starving, you can’t eat carbs after breakfast, you can’t eat dairy because of the fat content etc.
.
Stuff all that and tell that voice where to go. Only you are in charge!

Did you know that the way we present our food has a massive impact on our eating experience?

Research suggests that if it looks good, it’ll taste good too.
.
This humble yoghurt would contain the same nutrients than if I had just dolloped the yoghurt in a bowl, poured some strawberry coulis, chucked some berries on top and mixed everything to mush. .
It would be as good nutritionally but would look a lot less appealing and because we first eat with our eyes it might not be as satisfying.
.
I don’t make my food pretty just for you but also for me and my family. I do it because an artful arrangement is inviting and suggesting that the meal is going to taste nice.
.

Did you know that sweet potatoes are an excellent source of vitamin C, beta carotene (the precursor to vitamin A), manganese and antioxidants? 🤓

Are they better than white potatoes? Well, they are more nutrient dense but don’t kid yourself that you’re having a “health food” if you have a massive plate of sweet potatoes chips! 🤦‍♀️
.
Like everything, sweet potatoes have to be eaten in moderation. Sweet potatoes chips are yummy but still chips 😉
.
By all means, have some if you like them and appreciate the great nutrients they provide but don’t give them magical powers... 🧙‍♀️
.
Sweet potatoes don’t have to replace white potatoes, they can be eaten in alternance and in a balanced way 💚

They are neither good nor bad, they are sweet potatoes! 🍠

Today is shopping day so I’m using up the food I have left and so for lunch I had some homemade falafels and hummus on a bed sautéed Cavolo Nero with olives.
.
Those falafels were so easy to make! They were prepared in 10min with mostly store cupboard ingredients: tinned chickpeas, cumin, ground coriander, salt, pepper, garlic, a shallot, parsley, coconut oil and bicarbonate of soda.
.
I made quite a few, which I can now freeze and eat another day when I don’t know what to make 🌟

Throwback to last week when we had this beautiful meal made with fresh ingredients only.

Wonderful heritage tomatoes bursting with flavour, ridiculously creamy burrata, delicate asparagus spears, perfectly ripe avocado and simple boiled potatoes... What else could you need? Oh, yes, basil and olives!
.
The best meals are often the simplest, so don’t think you have to be a domestic goddess/god to cook to eat well.

Leftover lunch! My favourite kind because you can have a nutritious lunch but it takes no time 🌟
.
I’ve probably got more than three portions of vegetables in there (lettuce, rocket, peppers, tomato, courgette and spinach), plus some good quality protein (turkey) and a bit of fat a carbs (hummus).
.
Cook more on purpose so that you can have leftovers you can rely on!
.
I promise you, healthy eating doesn’t have to be complicated or time consuming 💚

Overnight oats can be prepared in many different ways.
.
I wanted something simple for today’s breakfast so I just soaked some oats in oat milk last night. This morning I got some blueberries out of the freezer when I got up and let them defrost for an hour while I worked. Finally i added some peanut butter and some nuts and seeds for crunch.
.
Sounds faffy but really each steps only took seconds.
.

For dessert we had a chocolate nice cream 😋
.
To me “nice cream” shouldn’t be eaten to avoid ice cream but more when you want something more fancy than fruit, that you’d like ice cream but that you don’t have any.
.
I like ice cream but it’s not something we always have in our freezer so I might make this instead when the urge takes me.
.
It’s easy, instant, delicious and nutritious!
.
Just whiz frozen bananas (1 per person) with unsweetened cocoa powder (1 tbsp. per person) and there you go! I used my trusted @vitamixuk again, which has a setting for frozen desserts and works a treat!
.
I was going to put the recipe on my blog but let’s face it, it’s not even a recipe!!

It feels like I mostly have been eaten things on toast or in between two slices of bread those last few days...
.
They were not bad options in the slightest but they were bread heavy nonetheless and today I felt like something else.
.
For dinner I wanted something breadless and low in starch and so I made some turkey and vegetables burgers, which I served in a lettuce wrap with chargrilled peppers and a spicy tahini and yoghurt sauce.
.
For those who are wondering, this isn’t me restricting because I feel guilty for having had so much bread.
.
This is intuitive eating, this is me listening to my body saying: “Can you please vary your diet? This is getting booooooring.”
.
It goes to show that when you eat too much of something, even something you love, it loses its appeal. And of course the opposite is true too: the more you restrict something, the more you crave that food...
.
Listen to your body not your mind.

I am having my staple egg & cress sandwich for lunch and I’m starting to feel painfully aware that when out I choose this sandwich 99% is the time.

Why???

Well, if it ain’t broke... I like it the best!! It ticks all my boxes: nutritious, tasty and practical.
.
I might try to branch out sometime but I won’t compromise my tastes even if if looks better on Instagram.

The only kind of clean eating I find acceptable...
.
I love this @veggi.wash which naturally removes agricultural contaminants, surface bacteria, pesticides, soil and wax from fruit and vegetables.
.
Because the boys are constantly reaching for the fruit bowl and that I’ve got better thing to do than clean an apple every 5min 🙄 I spray the lot when I get my shopping delivered, rinse, dry and I’m done for the week!
.
The other kind of clean eating is frankly less interesting and often borderline dangerous. I mean, since when have pasta or desserts become dirty?!
.

Quick breakfast before heading out!
.
Look at that amazing bread I bought in France before getting back! It’s called “le pain du mendiant” (the beggar’s bread) and is jammed packed with pistachios, hazelnuts, seeds, raisins and figs 😋
.
Yes, nuts are high in fat but they also contain fibre and protein which will both help reduce the GL of this bread. .
Nutrition ain’t black and white! 💚
