So now that I'm back to hopefully regularly. I decided to create my own post race nom noms! Sadly I have GI issues if I over indulge on carbs after a race. So i decided to make something that is healthy and decadent for after racing.
Chocolate Protein Donuts
Top with @wild_friends peanut butter @squareorganics chocolate peanut butter protein bar ( optional) but recommend
1/4 cup @bobsredmill coconut flour
1/4 cup unsweetened cocoa powder
2 tbsp @navitasorganics cacao powder
1/8 tsp sea salt
1/2 tsp baking soda
1/4 cup @nutiva coconut oil, melted
1/3 cup @wholesomesweet agave
1 tbsp @simplyorganicfoods vanilla extract
1/2 cup @enjoylifefoods chocolate chips
Preheat the oven to 350F and grease a standard donut pan generously with coconut oil. In a medium bowl or mixer whisk together the coconut flour, cocoa powder, cacao powder, sea salt and baking soda. Add in the eggs, coconut oil, agave , and vanilla and whisk again until a uniform batter is created. Fold in chocolate chips. .
Transfer the batter to a plastic storage bag, and snip off one corner of the bag with scissors, to create a “piping bag.” Pipe the batter evenly into the six donut wells and mini muffin tins if desired.
