Christmas is my favourite time of the year. "Hygge" is a Danish word for cosiness which means being inside with candles, delicious comfort food, and lots of cakes and sweets. I personally find avoiding the last (cakes and sweets) really hard.
One of my favorite Christmas Danish sweets is marzipan soft nougat chocolate covered balls or bars.Danish nougat is not the same as the chewy white nougat from the Middle East made of egg whites. It is made of roasted hazelnuts, is soft and has a very pleasant delicate taste. Marzipan is an almond paste consisting of almond meal and sugar, and has usually a very high sugar content.
This is my version of a healthy Danish nougat and marzipan chocolate covered bar. You can also put a piece of nougat inside of marzipan, roll it to a ball and then dip it in the melted chocolate. I made it super easy by putting marzipan and nougat in layers and covering it with chocolate ganache.
100 g hazelnuts
100 g dark chocolate (I used 70 %, but you can use even darker if you want to decrease the amount of refined sugar)
170 g pitted soft dates (for example Medjool)
1 TBSP coconut oil
125 ml (1/2 cup) coconut milk (or any plant-based milk)
Toast hazelnuts in a baking pan in one layer in the middle of the oven at 180C 7 to 10 minutes until lightly colored and skins are blistered. Wrap nuts in a kitchen towel and let steam 1 minute. Rub nuts in towel to remove loose skins (don't worry about skins that don't come off) and let cool completely. Remove the skin. Place chilled hazelnuts in a food processor and blend them until they become a cornmeal consistency. Add soft pitted dates and blend it to a paste. Add melted coconut oil, coconut milk and melted in a double boiler chocolate. Blend everything until it becomes an even mass. Put nougat in a form covered with an unbleached baking paper and let chill if the fridge for several hours.
220 g almonds
80 g pitted soft dates
For the raw version: soak the almonds overnight in a bowl of water. In the morning remove the water, rinse the almonds and remove the peels.
