It's unofficially officially winter in Toronto 🌨 and soups are just the thing to cozy up on those chilly nights.
Since my fridge needs some major restocking, let me share with you an emergency kit for soups: onions, garlic, and ginger. Bonus to the kit: coconut shreds and tomato paste. These last a while in the pantry. Mixed with different spices, you can combine them with any legumes and make a ton of options! I'm whipping up the African tomato split pea soup and coconut lentil dal all from the same base but different flavour.
My go-to rich dish that's easy to make is probably always a red lentil curry. Red lentils cook super fast and they're rich in protein, iron, B vitamins and PACKED with minerals. What about you, do you have a fall-back dish you can make with minimum ingredients?
