Sotto went full-on pork combo with this one: salty, crispy fennel crust around juicy, fatty, herby pork porterhouse. One of the dishes that demonstrate a “simple is best” preparation, the fennel is a classic combo with pork that amplifies the porkiness really well, giving off a heady scent that gets your mouth watering. As if crusting the meat with fennel isn’t enough, they double-whammy’d it and served it with a fennel salad, which also served to cut the richness of the pork. Meanwhile, the sweet and slight tang of stone fruit cuts the salt and also the richness of the pork, doing a great job at contrasting flavors. Definitely one of the great pork dishes out there!
