Winner, winner, turkey-day dinner!
I put together our Thanksgiving menu and this gorgeousness made the cut!!! This replaces stuffing and is gluten-free, whole food yummy! I know it’ll end up being only me eating it, but that’s beside the point It’s just our family this year and I don’t want it to be “just another meal,” ya know?

Apple & Sausage Stuffed Acorn Squash
- acorn squash
- chicken sausage (I used sweet vs spicy)
- kale, chopped
- onion, chopped
- quinoa, cooked
- Apple, peeled & diced
- pecans or pumpkin seeds
- coconut oil
- Himalayan or sea salt
*I eye-balled quantities. Next time I'd add more kale since it wilts a lot.
Preheat oven to 350*. Cut squash and scoop out the seedy / stringy parts. Smear coconut oil over the fleshy inside. Place in a glass baking dish, open side down, with a little water in the bottom. Cover with foil and bake 30-40 min or until soft.
In a frying pan, cook sausage. Add chopped onion, cook till soft & translucent. Add kale, cook till wilted, then add apples, quinoa & pecans/pumpkin seeds. Stir together.
Spoon mixture in to the squash halves & continue cooking another 5-10 minutes. Sprinkle with a little cinnamon & Himalayan salt.
