Redbreast Dream Cask 32 Year Old Single Pot Still Irish whiskey matured in refill American oak ex-Bourbon barrels in 1985. After ageing for 26 years, the spirit was transferred into a first-fill Oloroso Sherry butt for an extended finishing period. 46.5% abv.
Nose: blind, I would have had this pegged as an Armagnac. Incredibly fruity, with grapes, sweet brown sugar, oak spices and rich, rich, rich honey notes. Very big. Very smooth. Very sweet.
Palate: Now, there is the barley goodness, on the palate. The sweet notes are built on robust malty foundations which support honey roasted cashew nuts, rich vanilla toffee and new leather notes. This is an oily, rich sipper of a whisky. It tastes expensive and old. And it is. So that’s good!
Finish: Chopped hazelnuts come to the fore, with the sweetness hiding in the background. It is like a rich, condensed butterscotch toffee dipped in dark chocolate. A hint of orange blossom, too. Super. Really, really super.
