There is nothing more comforting as matzo balls! Now days, you can “veganize” ANYTHING. Here is the recipe for this heart warming meal. It is also on our website so check it out + some other vegan tips.
.
* 1 cup matzo meal
* 8tbsp VeganEgg Powder (Follow Your Heart) * 1 +1/2 cups ice cold water
* 1 tsp salt
* 4 tsp oil
* 2 tsp baking powder
* 1 tsp onion powder
* 1 tsp garlic powder
* 1 tsp dill weed
* Freshly ground blk pepper
* 3 quarts good-quality homemade vegetable stock, divided
* Diced carrot, celery, broccoli, kohlrabi * 1 medium sized onion cut in wedges
1. Measure and mix dry ingredients into a bowl
2. Mix together VeganEgg powder with 1 and 1/2 cup ice cold water
3. Add oil to VeganEgg mixture and gently mix to combine
4. Do not overmix
5. Pour VeganEgg mixture into dry mixture and gently combine.
6. If mixture seems a little too dry, feel free to add up to 1/8 cup water
7. Place in fridge about 1 hr
8. Bring a large pot of water to a boil
9. After matzo ball mixture has set, remove spoonfuls of batter and roll int 1 to 2 inch balls and drop into water
10. When all balls are in the water, leave to boil until all balls float to the top, then lower water to a rolling simmer and cook for 40 minutes
11. Do not stir at any time, leave matzo balls alone!
12. Remove matzo balls from water with a slotted spoon and serve in soup! Garnish with dill and enjoy
13. Bring vegetable stock to a boil in a large wide pan, and reduce heat to a simmer. 
14. Add all the chopped vegetables and onions.
15. Cook throughly and season with salt and pepper. 
16. To serve, fill the soup bowls evenly with soup and vegetables, add the matzo balls from the wide pan and garnish with fresh dill, and serve immediately.. .

Psyllium or flaxseeds for FIBER?

• Each product claims to provide different health benefits. Although they are both a great source of fiber, their nutrition profile is quite different.

•Flax actually contains high levels of phytoestrogens, so called because they mimic estrogen in the body.

. •While the medical community has yet to understand and come to grips with phytoestrogen biochemistry, it’s clear that phytoestrogens can cause unnatural hormonal disruptions. This can be a problem for people with high or low estrogen levels or other reproductive issues. So- in these cases psyllium is a great alternative source of fiber. .

頭がグロテスクですが、サーモンのアラが手に入ったのでさっと煮たらとってもおいしいかったです。

Currently in season: artichokes!

I’m a big fan of eating seasonally. The produce is much fresher, which means it tastes better AND has a higher nutrient content. Plus, it’s better for the environment because it’s not traveling as far - which also makes it better for your wallet. ✨
I was so intimidated to make artichokes, but I followed a recipe from @eyeswoon cookbook Eat Beautiful (her cookbook is just that) and they could not have been easier to prepare. And topped with a homemade aioli - so good.

This homemade #TacoTuesday 🌮 is especially delicious 😋 with blistered poblano peppers 🌶️and corn🌽. I have found my new favorite #vegan 🌱ground beef crumbles!🚫🐂 I don't know how @lightlifefoods did it, but the texture is perfect and the kids actually had zero bad things to say about it. 🙆Which is a miracle! Hormone-Healthy Organic Cacao Truffles recipe, because, #hormonefree !
Prep time - 20 mins
Cook time - 40 mins
Total time - 1 hour
Recipe type: Dessert
Serves: 10-12 servings

Ingredients:

2 medium organic beets
1 large organic avocado
¼ cup organic blueberries
¼ cup organic raspberries
1 teaspoon organic vanilla extract
3 tablespoons maple syrup
2 cups unsweetened organic cacao powder

Optional ingredients for garnish:

Organic walnuts, finely chopped
Organic coconut flakes
Organic turmeric powder
Organic beet powder
Organic cacao powder

Directions:

Fill a medium saucepan with water and bring to boil. Add in the beets, cook until fork tender (about 40 minutes). Strain.
Let beets cool, then peel off skin and cut into cubes.
Using a food processor or blender, blend the beets, avocado, blueberries, raspberries, maple syrup, and vanilla extract until a smooth texture forms.
Next, pour in the cacao powder ( ½ cup at a time) to evenly blend in with the fruit and veggie mixture. Add enough cacao powder so that the mixture starts to thicken.
Place mixture into a bowl and refrigerate for 1-2 hours. Note: refrigerating overnight will make mixture harder and easier to roll into balls.
Using a spoon, scoop out mixture into your hands and roll into a ball
Next, roll ball into toppings of your choice - walnuts, coconut flakes, additional cacao powder or even turmeric.

Blueberry cheese cake
三層の低糖ブルーベリーチーズを作ってみました。
型抜きの時に綺麗な円に抜けなかったのが残念でしたが、
ふわっとやさしい口どけ。美味しくて撮影後フィンガー分を一気に3個食べてしまいました(๑˃̵ᴗ˂̵)
本当はホールのが食べたいけれど子供たちのおやつにとっておこう♡

Today's #eatforbeauty dinner is spaghetti sqaush! It's delicious and #vegan thanks to @cheaplazyvegan's recipe for the "parmesan" topping. Y'all know cheese is my vice. 😭 This dish took minimal effort... I didn't even heat up the sauce lol. I just mixed it in the piping hot spaghetti squash and it all balanced itself out. 😅 How's THAT for lazy? .
