Roasted Chinese Eggplant 🍆
Fresh ingredients from the farmers market here! I roasted all together about 4 small Chinese eggplant (looks similar to Japanese eggplant), 1/2 onion, 1 large tomato, garlic, ginger, and basil in a light plum sauce. For the light plum sauce I used about 3 Tbsp of a good quality plum sauce and added about 3/4 cup water and a couple Tbsp of Tamari sauce and stirred until mixed. I adjusted to taste.
