On this fruity friday we wanted to share all the autumn hues and a fabulous delicious find from @wild.grove Foraging at local markets gives us the chance to find new seasonal things to savour. We are always discovering tasty suprises. This time it was spicy pickled apples. Why didn't you all tell us how good this is? A great new way to enjoy Tasmania's seasonal apples, which are abundant at the moment. We scoffed some with cheese on bread as part of a ploughman's style lunch - one of our weekend favourites because it feels constantly fresh with what's available seasonally. But a good locally produced pickle is mandatory!

They’ve been partying hard with the last of our 1yo Serrano Chile (@fatcarrotfarm) + Koji hot sauce and some slammin’ garlic scapes. We’ve been smashing it all over our fresh tempeh this week and are very happy with the results. Supplies are limited so MEMBERS will be the first to receive it this month. Say hello to these fancy golden squash. πŸ˜‹These little squash gems are everywhere at the moment. Earlier this week we challenged ourselves to find a new way to take advantage of their seasonal availability. We found this photo and recipe from @mynewroots on her website (they are called stuffed patty pans if you want to find the recipe). They are stuffed with onion, garlic, caraway seeds, quinoa, kale, peas (of course frozen Tasmanian grown is okay) and goats cheese. Humble no more when they get this super tasty treatment. What a fabulous side dish. Cant you just see them on your weekend table? We will never look at these squash the same way again.

We had a great meeting with our friends from @sprouttas on Friday. They run a brilliant program that helps small scale producers and growers realise their plans. Through a 12 month program they get their ideas in the ground, growing and to market and connects these producers with consumers. Hear hear! Like us Sprout have noticed that more and more Tasmanians want to learn about seasonality and the provenance of their food. This is a world wide phenomena, but in Tasmania we are very well placed to really make this an everyday reality. After our inspiring meeting a quick dash out for lunch and low and behold this dish @giddyupstore was seasonal Tasmania in a bowl. The slaw was crunchilicious! It is Fruity Friday! How fruity is this wheelbarrow of quince? This is a classic photo of our autumn abundance here in Tasmania. Quince has such an intense aroma and flavour. They are great in with your roast veggies, bottled, or in jams and jellies. We love to slow cook them with star anise, sugar, rind and cinnamon on the stove top till they go that pretty pink/rose colour. The smell in the kitchen is gorgeous. Then they can be frozen in batches for a warming nutty crumble with apples or in muffins during the colder weather. We would love to hear your quincy suggestions.

We’re headed for the @the_red_door_larder this morning with lettuce, the first Daikon radish, the last bag of purple beans (probably!), the last few baby zucchinis, the first bag of mizuna & rocket leaves, broad leaf parsley, chives, and quite a lot of tomatoes. It’s a cross-over-of-the-seasons harvest. A quick on the run post today. We popped into #GovernmentHouse in #Hobart this morning, as you do πŸ˜‚. Ainstie Wagner the Executive Chef is one of our Board Members. Lucky us. She and Tara (the gardener who manages the kitchen garden) were harvesting citrus in preparation for a VIP dinner next Monday. (We will share pics of the final product) Great tip from Ainstie, always harvest a few days before you intend to use citrus. You will yield way more juice. Look at the variety in this box. 🀩😍😎 Yes even finger limes which are normally grown in Northern NSW. This week we are posting some ideas for how to #reducefoodwaste and encouraging you to share what your strategies are. For example, if you are not a purist you can use almost any veg in your crisper as part of a Gado Gado Bowl. There are so many easy recipes for making the satay sauce online. We made a very simple one with a peanut spread, lime, coconut milk, soy, onion and garlic. Wowsers it was good with all this beautiful Tasmanian seasonal veg and we gave our crisper a work out. Over morning coffee we are contemplating how we will enjoy these figs and pears 🍐🍐🍐 picked up at a farmgate yesterday. As ingredients they are great friends. They could be salad ingredients, fabulous on a cheese platter or superb as is. Google presents us with LOTS of options. Sliced on toast they would make a special breakfast with that coffee. β˜•οΈ

Have you tried the sweet potato toast trend? We posted a video on our Facebook last week about it. The video was pretty popular, so we gave it a try. Here is the result. Sweet potato topped with avocados from @avoland_avocados , sweet corn from @elphingrovefarm tomatoes from @provenancegrowers , coriander and a drizzle of lime. Sublime flavours. We sliced the sweet potato quiet thinly ,about .5cm, because our first effort was too thick. Would we do it again....maybe. We probably prefer sweet potato chips in the oven. Anyone else given this a go? Do you have any tips. It really is a great way to #vegitup

What do they say about eating with your eyes? It certainly starts there if you are using gorgeous ingredients like these carrots from Steve's Vegies stall @harvest_launceston Turns out carrots are great to combine with celeriac (which we profiled yesterday) in a salad. We found a simple recipe on SBS Food - combine equal amounts of grated or finely sliced carrots ( if you have a julienne peeler that would be ideal), celeriac and beetroot with a handful of mint and red birds-eye chilly, add a good glug of #EVOO and a squeeze of lemon- ta dah ! So simple, so seasonal and so sensational. If you want to avoid the beetroot colouring everything add it last.

We are not proud to admit it, but we have only just discovered celeriac. But what a great find.πŸ˜‹ It is so versatile. What you can do with a potato you can do with celeriac (think roast and mash) PLUS it is great raw thinly sliced in salad like slaw. It combines beautifully with sliced apple which also in season and abundant. Thanks to Matt @elphingrovefarm who gave us heaps of tips at his stall at @harvest_launceston It might not be a pretty veg, but hey looks aren't everything. With a subtle taste and good crunch we are converts. Look out for them in markets and the shops.

It is certainly bowl kind of weather here in Tasmania this weekend. Beautiful much needed rain is falling across the state. During Veg it Up Week (hint hint today is the last day please use #vegitup) we made sure we savoured lots of seasonal veg and some new dishes. We have to say, this one was a stand out. Of course it totally makes sense that a #vegetarian and #vegan restaurant like Honey Brown Cafe (South Hobart) would totally nail the veggie hero dish. The char-grilled broccoli was delicious and all its veggie, green goddess dressing, seedy, kimchi and rice mates were delish too. We could eat this every day. Look for bowls when you are eating out, they are a superb way to enjoy seasonal veg. Or make them at home with your favourite veg.

Last week when we visited Government House we got a behind the scenes reveal of the HUGE pumpkin being grown by Tara for the Bream Creek Show which was on over the weekend. (Check out our stories today to see this impressive pumpkin). When we had the tour of the kitchen Tara showed us the range of pumpkins they grow mostly heirloom varieties. Some of them were funny bumpy looking things, which Tara explained is a good sign that they will be super sweet once harvested. Growing pumpkins does take some commitment because it is a long time from seedling to harvest. But they are so worth it. Roast/bake them, soup them, gnocchi them , mash them, curry them, cake or bread them. You get the idea they are incredibly versatile. With correct storage in a cool dark, dry place once they have cured. They can be stored up to 6 months. Don't forget to save some seeds for next years crop. Do you have any storage or eating tips?

On this Fruity Friday a big sing out to all the Tasmanians who will be bottling and saucing tomatoes this weekend. We captured this pic of the fantastic toms grown in the Government House Kitchen Garden by the talented Tara. Arent they magnificent? A nice mix of colours and sizes all on their way to the Kitchen for use as part of food served at functions and staff meals. Sometimes the task of making the most of the seasonal bounty and making sure there is no waste can feel a bit overwhelming. We have seen some incredible pics via social media which are really inspiring. If you are bottling/saucing this weekend, we hope you have good company and plenty of jars and bottles. The pop up is in their car park on Tuesdays between 9-12. This pic shows you what we popped in our basket. There are lots of pop ups and box programs in local communities across Tasmania. Many of them run by not for profits and to cater for the needs of the local community. BUT, they always welcome other customers, in fact they are critical to their financial success. Fish head stock miso soup🍲
The best way to respect a life you took away for feed is to use the whole animal. Fried both side of the fish head to golden brown, replace in a pot, add water to just cover it. Bring to boil then simmer for 30 minutes. Strain the head, add tofu, wakame and a white+red miso mixture, a heavenly flavour is ready for the hungry soul. After us, our garden lives and plants got a feast too

Aren't these amazing? They are Tazzy Berries (Myrtus ugni berries, or Myrtus berries) They are a fruit that grows on a hardy evergreen shrub and native to Chile. We had our first taste during our Government House tour yesterday. They have a beautiful aroma and flavour. They taste like strawberry, apple and pineapple all at once. Quite incredible They are being harvested now so look out for them, try something new. They are a real sensation.

This morning we were at Government House in #Hobart to get some pics in their amazing kitchen garden.We are getting ready for Veg It Up Week which starts on the 19th March. A big thanks to Tara and Ainstie (one of you Board Members) for the tour. If you haven't visited their kitchen garden, dont miss the next open day and a chance to check it out. They have about 3/4 of an acre under cultivation for veggies plus a fabulous orchard with fruit and nuts thriving. Last week they donated a large quantity of pears to @secondbiteorg the food charity. They have a no waste philosophy In the House kitchen and a fantastic commitment to using produce from the garden everyday for the large number of functions and meals for staff. We spotted these beautiful kiwi, nearly ready for harvesting. Wouldnt it be great if they were grown here in Tasmania on a commercial scale? Such a beautiful fruit.

Can you see what we can see? Yep it is Tasmania shining through the yoke of our egg (thank you clever chickens). We think this is the perfect weekend breakfast or lunch. We have toasted some @imagobakeryandpatisserie wholemeal sour dough, topped it with our homemade hummus (chickpeas, lemon juice, garlic and #EVOO blitzed - we keep it simple and also make a big batch and freeze portions), slices of homegrown tomato with a side of uncooked broccolini, which is delicious raw. Over the long weekend we will be heading out for some foraging fun. Blackberries and apples from 'orphan trees' are on our list. During the week we could not resist the opportunity to get in some nutty foraging at #HuonHazelnuts in the #HuonValley . It wasn't so much a picking experience but rather scrounging on the ground for nuts that have fallen from the tree and been missed in the main harvest. There are still PLENTY to be had if you fancy scrounging for them. Check out their Facebook page for cost and contact details.

So this weekend we will be researching how to liberate hazelnuts from the shell, roasting and when they are ready to eat. Pretty sure we might have a wait ahead. We never stop learning about the amazing food we produce here in Tasmania. And of course we love a chance to make the most of food that would otherwise not be eaten by humans. Happy foraging.

Public Service Announcement - there are only about 4-6 weeks left of the season for Tasmania's own @avoland_avocados . If you haven't tried them yet dont miss out. They are creamy and delicious. It is fantastic that we now have our own local Tasmanian grown avos. We love avocados as a spread, in guacamole, salads, on toast for brekky and in smoothies. We have been buying them in bulk, with some friends, from #BackYardBounty in #Hobart. Nashi Pears are in season in #Tasmania. These delicious, juicy and crispy pears are originally from from eastern Asia, think China, Japan and Korea. If you haven't tried one they are like a combination of an apple (size, shape and crispy) and a pear (taste). They are harvested when ripe, so if you have a back yard tree or are buying from a market, farmgate or retailer, look for firm fruit and is light yellow-green colour. They are very versatile. You can enjoy nashis poached, grilled, baked, roasted, barbecued or just sliced fresh on their own or in a salad. They are delicious in savoury or sweet dishes, especially with chicken and pork, or on a cheese platter. Great for lunchboxes. However you eat them, enjoy the nashi season.

Tonight's experiment: stuffed zucchini flowers. Since I don't eat dairy and these are commonly filled with cheese I made a cauliflower and butter bean mash with a few curry spices and then oven baked them. They turned out surprising well. Stuffing zucchini flowers is something I've wanted to have a go at for years. Cauliflower and butter beans (with onion and garlic) are associated with the metal element in Chinese medicine due to their white colour but this whole dish probably also benefits the earth element as it is pleasantly sweet. Yesterday we popped into @hobartcityfarm to have a chat about our forthcoming Vegitup Week (19-25 March). We have been long time admirers of what they are achieving in their urban market garden. At the moment they have over 20 crops growing ( veggies, herbs and flowers). They sell to cafes/restaurants, have an online shop where you can by a box or choose what you want, with pick up Wednesday afternoon. Check out these few slides to get a flavour for what they do and their web site for the whole story. We will be visiting on their harvesting day next week. Urban agricultural is a huge international trend so it is fantastic to see our own Hobart version plus food grown at this scale in an urban environment.
