What’s easier than a stir fry?💁🏼‍♀️

I whipped up this bowl in about 10 minutes and it was perfection. 👌🏼😊
.
I used one package of the Healhy Noodles I got from Costco (there are 6 packages in the box), that I rinsed and patted dry with a paper towel, then set aside. .
In a non stick pan I dry fried half of a package of tempeh, then added 2 cups broccoli florets and 1/2 small bell pepper. I added a tablespoon of water and covered imtye pan with a lid to get the veggies to steam lightly. Once the water evaporated I added the sauce:
✨2 Tbsp soy sauce
✨1 Tbsp pure maple syrup
✨ 1 tsp sesame oil ✨ 2 cloves of garlic, minced
.
Whisk the sauce ingredients in a bowl and pour over the veggies and tempeh, then cook, stirring constantly, until the sauce thickens slightly and coats everything in the pan, about 2-3 minutes. Toss with noodles and serve. Enjoy!☺️

TGIF!!!! My third week on #lowcarb and it’s going strong! I’m sure you’ve heard about #zoodles 😋 when I talked about it last time, a few of you said that they don’t like eating “cold” foods. Let's talk VEGETARIANISM!

A couple of months ago, I discovered (through a detox) that eggs and me are not friends in the morning. I wanted to be friends with eggs -- I've had a long love affair with eggs -- but I quickly realized that it was an abusive relationship and it had to end. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
My mornings became vegetarian. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Then I started implementing ONE #VEGANDAY a week here at #GroffNation. It was my little way of saving some cash, helping out our planet, saving some animals, and being kinder to my digestive system. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
And then a couple of weeks ago, I went #lactovegetarian for a whole week, completely by accident. This is when I discovered that me and meat are not friends, either. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
I felt lighter. I felt more energetic. My skin looked better, I was sleeping better, my workouts were going more smoothly. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
The weight that I was retaining from my bout of #adrenalfatigue started to melt off. MELT. OFF. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
So my venture into vegetarianism has begun. Again. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
This time, I am more conscious of how the foods that I am fueling my body with are making me feel. I am more intentional about what goes into my mouth, and even at what time. Since I am almost done with my masters degree in nutrition, I now know HOW to transition (some of you may remember how my hair fell out in clumps when I went vegan 12 years ago).

There are so many great vegan and vegetarian options for the foods that we love. Take this, for example. VEGAN ROASTED RED PEPPER PESTO. OMG it was so YUM. And even HERSHEY liked it, which is saying a lot because he is a CHEESE LOVER. It was that good. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

This past week in New Zealand has been a difficult one, a confusing one, one full of many, many different emotions, as we faced the devastating loss of 50 of our own from the beautiful Muslim community. I, along with many, have felt helpless, because what can you do that will ever be enough when so many people have lost so much? But among the grief has risen so much beautiful compassion, so many incredible displays of unity as we have responded as a country in the only way we have known how - with love. Nothing will ever make up for the lives which were cut short, but it is up to us now to honour them, by making sure this never happens again. By actively making sure we who have a voice stick by and stick up for those who don't, by making sure that everyone who calls New Zealand their home feels safe, and accepted here. Be more open to new cultures, and different beliefs, learn more about them. Be more aware, more present, more compassionate. Look after yourself, but also embrace more, be kinder, offer an extra smile, and always, always act with love. Not just today, not just tomorrow, but EVERY day 💛 Xx

Curried Butternut Squash Soup, vegan, recipe below :) .

Serves: 3ish

Ingredients
1.5 lbs raw butternut squash, about 3 cups, in one inch dice
2-3 carrots, chopped
One large onion, sliced
2 tsp oil, coconut if you have it, more if needed
3 cloves garlic or more to taste, finely chopped
3/4 tbsp hot madras curry powder, more to taste
14.5 oz can light coconut milk, reserving some of the thicker cream for plating (or bowl-ing, in this case)
1 cup of broth, more as needed
Sugar, honey, or maple syrup, to taste (optional)
Chili garlic sauce (optional) .

1. Preheat oven to 400 and line a baking sheet with parchment paper or tinfoil.
2. Add butternut squash to the baking sheet, along with carrots and onions. If they don’t all fit, grab another baking sheet and split the 3 veggies up between the two sheets. Everything should fit in a single layer.
3. In the pan, toss the veggies with 1 tsp of oil so they are thoroughly coated, adding more oil if necessary. Season with salt and pepper.
4. Throw your sheet pan(s) in the preheated oven. Your goal is to get your veggies deeply caramelized, to bring out their natural sweetness. Roast for 30-45 minutes, tossing the veggies occasionally to promote even browning.
5. Heat a soup pot over low heat. Add 1 tsp of oil along with your garlic. Sauté until fragrant, 1-2 minutes.
6. Add curry powder to the pot with the garlic and oil, mixing to combine. Cook for 1-3 more minutes, until curry is fragrant. Remove from heat until roasted vegetables are done.
7. When your veggies are browned and caramelized, add them to the soup pot.
8. Add your coconut milk and stock to the pot, stirring to combine. Using an immersion blender, blend the vegetables thoroughly. If you don’t have an immersion blender, this can be achieved by blending or processing the vegetables.
9. Taste your soup and add salt, extra curry powder (optional) and your sweetener (optional) to taste. Bring to a boil and reduce to a simmer, adding additional broth to achieve desired consistency. .

Decided it might be fun to do a, “What I ate in a Day” series of posts today. I’m currently a wee bit low on groceries, so this is just me grabbing whatever I have that makes sense together. I typically have a cup of coffee with cashew milk for my first meal of sorts, but I’m currently completely out. For lunch I made a chickpea stir fry. Originally, I was trying to make the chickpeas crispy, but I wasn’t thinking and added the frozen veggies into the same pot which caused the chickpeas to soften a bit. It was still very good though.
For this I used: ->1 can Chickpeas ->1 can Baby Corn ->1/2 bag Frozen Mixed Veggies ->5 Cloves Garlic ->2 Green Onions
->Large handful Cilantro
->Juice of 1 Lime ->Garlic Powder ->Cayenne Pepper ->Chinese 5 Spice Blend ->Red Pepper Flakes ->Sesame Oil
->Salt & Pepper
For the Sauce: ->Soy Sauce ->Maple Syrup ->Sriracha
->Rice Vinegar
->Bbq Sauce ->Ground Ginger ->Flax Seeds
I cooked the chickpeas in a little sesame oil, chinese 5 spice, salt and pepper until they were slightly crispy. Added the minced garlic and then the frozen veggies. After everything was cooked, I added the sauce and mixed in some of the lime juice, green onions and cilantro and cooked until the sauce was heated and slightly sticky. Served with rice and topped with the remaining cilantro & green onions.

Recently I’ve been very conscious of how I spend my dollar. How you spend your dollar is a lot more important than you may realize. You’re not just spending money, you’re casting your vote. So where do you vote? Do you vote for factory farms and pesticide ridden produce? Or do you support your local economy at the farmers market and local shops?
I just like to consider where my money is going after I buy whatever it is I need. Does my belief system align with the company or business I am buying from? I have been putting my best foot forward to stop shopping at big chain stores and start supporting local and sustainable businesses that align with my ethics. So going to the farmers market, locally owned and sustainable shops, and healthy restaurants with happy employees has been my focus.
This photo doesn’t have much to do with this topic other than on the day it was taken, my best friend and I spent the whole day going to local business and posting flyers for her dance show and my other friends yoga retreat (message me if you interested in that). Getting more aquatinted with the community in Sonoma County was really beautiful.
Anyways, this came to my mind this morning so I thought I’d share my thoughts on this topic. Staying conscious and aware with your money is truly important because where you choose to invest makes all the difference. So invest in what you believe in. Even if that means cutting out certain things you may enjoy, (like a fast food burger or fast fashion pieces) in the long run, it will make you happier and healthier and lead to a better world for the greater good.
