Fun Fact: When I was 12 y/o I decided I to go vegetarian because I absolutely loved animals🐷! But don't get me wrong, it was hard. Before going vegetarian I ate so much meat that my parents joked about me being a carnivore. When I was 14 y/o I started getting interested in my health and learned about a whole-foods plant-based diet. I began cutting dairy and processed foods out of my diet and felt great but it was purely for health reasons. When I was 16 y/o my sister and I learned more about factory farming and it's environmental impacts. I was already eating a mostly plant-based diet, but I quickly realized that relying on animals was not a way I wanted to live. Together, my sister and I took the leap to a vegan lifestyle and I've never looked back!

Enough about me let's talk about this food! Each day the Hare Krishna's serve vegetarian and vegan lunch on campus at UF (ik they do this at FSU and some other universities). Each meal is $5 all you can eat (or cheaper if you buy in bulk). I absolutely love the balance of veggies/greens, carbs, and protein (beans or lentils) and it's so convenient! Its also a great excuse to sit outside and be with friends. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Today's lunch is bean chili over rice with salad and their incredible almond dressing. And for dessert a little scoop of chocolate halava.

Adding these Maple Bacon Brussels sprouts with a Dijon aioli for dipping to the Thanksgiving menu!!! 🍁
Keto peeps! What's on your menu???? I wanna know!
—⠀
Sprouts:⠀
- 3/4 lb bacon (11 slices)⠀
- 2 lbs halved Brussels sprouts⠀
- 1 cup choppped walnuts
-1/2 yellow onion thin sliced⠀
- 1/2 c sugar free maple syrup⠀
- Pinch of salt⠀

Dipping aioli:⠀
- 2 tbsp mayo⠀
- 1 tsp sugar free maple syrup⠀
- 2 tsp whole grain mustard —⠀
To prepare the aioli, combine all the ingredients and refrigerate.⠀

Cut bacon into bite size pieces.⠀
Cook until almost done in a cast iron skillet.⠀
Remove the bacon and leave grease in pan.⠀
Add sprouts and onion and cook 15-20 mins over medium high heat.⠀
Add in maple syrup and salt and stir.⠀
Add bacon back in as well as walnuts.⠀
Cook for a few minutes until walnuts are toasted.⠀
Serve.🥓⠀

Recipe testing for Thanksgiving is looking sweet. 🦃🍯🍂🍁
Growing up, I lived at some apartments with a very multicultural group of people. Some neighbors would make homemade baklava around the holidays and share with my family. Obviously, I was in sweet heaven! 💆‍♀️ So, when I found a recipe for vegan BAKLAVA on @sweetsimplevegan I HAD to try it out. I also used a gf phyllo dough recipe from @gfshoestring so this dish was entirely from scratch!
Honestly, I love desserts but my family hardly has room after the main course at Thanksgiving. 🤷‍♀️ Therefore, I like to invest a little more effort into making savory dishes. After all the hype, @whatthepitta finally opened today in Brighton so I went to check it out on my lunch break. It was like stepping back in time, back to when a kebab house visit was a regular occurrence after a Friday night sesh. It has the feel of a traditional kebab house but without all the guilt as it's 100% plant based. I now understand the hype as it was so so good. The bread is freshly cooked in front of you and then packed full of 'doner meat', salad, pickles and chilli sauce. I want another now just thinking about it.

Roasted Kabocha Squash Smoothie ❤️ Did you know kabocha squash contains almost 7 grams of fiber, which can help you maintain a healthy digestive tract. It's rich in Vitamin A, which is important for healthy white blood cells, good immunity and for vibrant eyes, skin and hair. A single serving of kabocha squash provides 70% of the day's recommended requirement! Kabocha is also a good source of iron, vitamin C and some B vitamins, plus it's a complex carbohydrate so it's great for replacing energy stores after workouts! Has anyone tried squash in their smoothies? Tell me everything!?! ____________
I used my leftover roasted squash. It's so simple. All you do is remove seeds, chop squash into 1in cubes. I leave the skin on, then drizzle with avocado oil, pink sea salt and a dash of cinnamon. Roast at 375F for 30 minutes. Wait until the squash is cool and then pop into freezer for quick additions. You can also steam squash to keep it simple!!

To make smoothie:
1c. Frozen squash
1/2c. Frozen cauliflower @wholefoods
1in. Piece fresh ginger
1/2 tsp cinnamon & allspice
1 Tbsp almond butter @spreadthelove
8oz. Cashew milk @malkorganics
1 tsp @sunpotion ashwagandha
1 Tbsp Flaxseeds
1 scoop @toneitup vanilla protein powder
Toppers: @perfectbar pumpkin bar, cinnamon, passion fruit & coconut flakes.
1. Blend all together in @vitamix or blender. Add more liquid if to thick and then add toppings! Enjoy 😍

Overnight oats😍

Have you tried Agrodolce? Lacing roasted delicate squash with a sweet and sour zippy sauce is where it is at! Toss on some pomegranate arils for snap and some hazelnuts for an earthy crunch and you will have the crowds going wild! OK, maybe not, because as excited as I get about squash I can't really say I go wild, but seriously, this is a very nice departure from the usual.
