So 30 days superfasting as per What the Fast and the results are in. Weight -2kg ;
Waist -2cm, waist at belly button -2.7cm, Thigh -0.5cm, Calf -0.7cm and Arm -2.5cm. Great results. Graph shows my body mass definitely fluctuates but overall trend is down. Best thing is I FEEL GREAT! Smashed out my WOD class today and felt awesome after. Had a bio-impedance scan at Vibratrain Hamilton yesterday and body fat % at 27.1% (up since Sept last year as lost some muscle through running training I suspect). Mount Runners Half Marathon next weekend and feeling confident ๐Ÿƒ. Can't wait to help others reach their wellness goals and feel amazing through fitness, nutrition and support! ๐Ÿ’•

Monday night dinner feat. a 2 minute throw together! ~
After a long day I canโ€™t be bothered slaving over a stove so I keep it simple Monday to Friday! On Sundayโ€™s I prep some meals. Yesterday I made a big batch of chicken patties with coriander, ginger and garlic to have through the week.

And this morning an easy to make frittata is on the menu ๐Ÿ˜Ž. This one has red pepper, peas and the green leaves are wild garlic which came in my @riverford box this week. I wasnโ€™t sure what to do with it but itโ€™s lovely on the frittata and has a very mild garlicky flavour ๐Ÿ‘๐Ÿผ.

I have added some leftover roast chicken as my protein and the good fats are fresh chopped avocado and also some olive oil in the dressing. If you struggle with putting together healthy meals and time is a big factor for you. A slow cooker is a really useful addition to the kitchen and they are not expensive. You can roughly chop lots of veggies add a little stock and some herbs and spices and leave it unattended for a few hours.

Tonight dinner was Cauliflower & Sweet Potato Lasagne from the โ€˜Budget Pasta Collectionโ€™ on Cookidoo. I made the sauce dairy free by replacing the butter with olive oil and the milk with almond milk. And then you can just omit the feta from the top. Easy, delicious, & perfect for a meat free dinner. Served with a side of steamed cabbage and a little tamari sauce for some added flavour ๐Ÿ’ซ an easy way to get those greens in. If you can make a little salad or prepare some veggies to go with a meal, you are going to include lots more nutrients and fibre in your diet. This is easy to ask for if you are eating out too.

If you find these boring, you can easily add some extra flavour with some tamari sauce, garlic or lemon and olive oil. I also use various โ€˜sprinklesโ€™ that I make up too. This one is a mix of chilli flakes, toasted sesame seeds and nori flakes - a favourite at the moment ๐Ÿ˜€.

Doing a bit of batch cooking so I have some breakfast for the next few days.....egg muffins are always a good one. If you make a big batch you can have 3 or 4 and a smoothie to go with them ๐Ÿ˜Ž.

They are very easy to do with whatever veggies you fancy. These have garlic, onion, red pepper, brocolli and mushroom ๐Ÿ‘๐Ÿผ.

๐ŸŒŸBeat, 10 eggs with some seasoning....I added turmeric for an antioxidant boost ๐Ÿงก. .
๐ŸŒŸLightly sautรฉ the veggies of your choice. .
๐ŸŒŸMix the veggies and egg mix together. .
๐ŸŒŸGrease a muffin tin and divide the mixture into the tin.
๐ŸŒŸCook in the oven for 25 mins at 180 degrees. ๐Ÿ‘๐Ÿผ

Iโ€™ve thrown together a simple ๐ŸŒˆ๐ŸŒˆ๐ŸŒˆlunch salad today as I wanted something fresh and light today. Itโ€™s not particularly seasonal but sometimes you gotta go with how you feel ๐Ÿ˜‰.

This is baby gem lettuce, peppers, tomato, cucumber, celery, onion, 1/2 avocado. Topped with a tin of sardines (for some protein and good fats), some toasted hazelnuts and an olive oil and lemon dressing.

They are called oca tubers.... Iโ€™ve never seen them before! Apparently itโ€™s a sweet lemony root that can be eaten raw, roasted or mashed...A little bit like a yam. I also hear that they are full of B vitamins ๐Ÿ‘๐Ÿผ๐Ÿ˜Ž.

Itโ€™s so lovely to eat some fresh tropical fruits. I rarely buy fruits like these at home as I prefer to eat foods that are in season. I also try to get hold of more locally sourced produce to support local businesses. This way the food hasnโ€™t travelled from the other side of the world, so it is likely to have more nutritional content.....Also our bodies seem to thrive on what is in season at that time ๐Ÿค“.

Not a bad breakfast at all.... loads of fresh salads, salmon and eggs to choose from and Iโ€™m a happy bunny ๐Ÿฐ, itโ€™s a great example of a balanced breakfast as there are some good fats in there, protein and a selection of salads.....Iโ€™m not going to be posting every day, as I need a bit of time away from my phone but I canโ€™t resist the occasional photo when I have something good like this to share. My favourite go to dinner at the moment. Soup and steamed veggies. Time is important and I don't have much time to cook in the evenings, so I have been batch cooking hearty soups and then all I need to do when I get home is steam some veggies ๐Ÿ‘๐Ÿผ. I do add a protein to the soup, maybe some chicken, lentils or beans and I also add butter to my veggies so I am getting some fats ๐Ÿ˜Ž.

Us Woods have this meal at least fortnightly. It is a highly nutritious plate of dinner goodness and relatively straight forward to make ~ BBQ salmon, sweet potato roasted in coconut oil, dark leafy greens, roast beetroot, roasted walnuts and goats cheese salad with balsamic vinegar and asparagus roasted with chilli flakes and macadamia oil (just 5-10min in oven - so still firm) I like horseradish cream on my salmon ๐Ÿ˜‰
Great mix of vege, healthy fats, protein and complex carbs for optimum health! And with this mix I always feel full and satisfied.

FYI : As long as the asparagus is not over cooked it is a fantastic prebiotic as is beetroot too. Prebiotic foods feed our probiotics (gut bacteria) and help them thrive and flourish. There is currently lots of new research/studies linking good gut health to enhanced mental health, increased immunity, and an efficient well functioning metabolism. Good gut health is correlated to easy unproblematic digestion, less processed food/sugar cravings and has influence over how many calories you absorb from the food you ingest ๐Ÿ˜ณ - now that is cool ๐Ÿ˜Ž)
