There it is - the flame in the onion! Onions are not eaten by Yogis and Buddhists who are in meditation practices which are best experienced with a calm mind/body. The heat of plants from the allium family (onions, leeks, garlic) are stimulating to the digestive fire 🔥 #Agni and in turn to the vibrations of the thoughts, which can disrupt a peaceful clear mind. Sometimes it is just what we need though - a little extra boost to the processor. Food is medicine and also a great meditation on life and our part in the big picture- with the plant kingdom🌱 animal kingdom🐘 and all the elements. It was a really wild day. Morels asparagus nettles. And repeat - for as many days as we can squeeze from the glorious spring offerings. Morels were gathered at a bread delivery to @thechasewines_, talk about a delivery bonus! chocolate almond pull-apart bread. lots of milk chocolate - in the dough itself and the filling, and as the topping to boot. recipe from the Bake from Scratch magazine @thebakefeed, issue mar/apr 2018.
i found this recipe interesting in that you do both of the two rounds of proofing before you roll it out, fill it with the filling and cutting it into slices. i wondered if it wouldn’t overstrain the dough - i always thought you shouldn’t over-handle your dough after its second proofing. but i followed the recipe. and the resulting loaf, as i’d suspected, felt a bit dense. but that didn’t stop it from becoming wildly popular with my fam, so i might have to make it again. only, i’d try and shape the dough first before the second proofing.

@londonfarmers sprouting broccoli, @wildcountryorganics spinach and spring herb tart with @fenfarmdairy Baron Bigod Brie, a mixture of one very ripe, rich one and a less ripe, softer flavoured one, from my local @froth_and_rind, encased in a @rudehealth sprouted wholegrain flour and walnut pastry! Thank you everyone who came to last night’s wonderful #VoicesAtTheTable and polished this off with gusto, along with everything else, you made my evening, THANK YOU! Our guests also feasted on... rye, Beauvale, Cheddar and parsley tartlets with spring onions and spring greens;
radishes with @fenfarmdairy Maldon salt; Suffolk spelt, barley and quinoa crackers with @st.judecheese, asparagus, caramelised red onions and chives; buckwheat, oat and hazelnut sablés with @st.judecheese, slow roasted Isle of Wight tomatoes, marjoram and mint and a big homage to my favourite @hodmedods with yellow pea flour, quinoa nut and seed loaf with wild garlic, parsley and fava bean dip; carrot, coriander, dill, camelina and flax seed crackers with carlin pea, chard and tarragon dip and lots if their delicious dried beans and pulses with sea salt and horseradish. In typical Henrietta style, I decided to make this rather large mix of things (eek!) and was running a little behind when I arrived so thank goodness for Terri @happyendingsldn and amazing Ellie who saved the day and helped me with the last bits of prep, and @laurienouchka and @hestercant for helping with washing up at the end, THANK YOU generous, kind and wonderful women, you are GREAT and I think I would have collapsed without you!!! ♥️ Sad to have missed you speak @we_are_food, @dan.saladino and @laurasophiafreeman and everyone else in the first half, but can’t wait to listen to the podcast! when your bougie auntie and her boyfriend come to town and take you dinner, and the three of you act like @oceanbirmingham is a tapas restaurant: we were the “one of almost everything” table last night, and I woke up with #noregrets 😂
When we walked in, she said “we need the fried green tomatoes because Korean-fried is better than everything else.” That and the tuna bon-bons were so good, I didn’t even stop to snap!
1. I was suspicious of the bubblegum roll (left of pic. 1) bc brown rice is listed as an ingredient, but the kitchen ran out of brown and had to make it with white rice anyway, which just goes to show you that sometimes, the universe looks out for you 😭
2. My favorite thing was definitely the oxtail risotto under the butter-poached lobster (swipe to see.)
3: the bouillabaisse was aiight 🍤

Why you need our British asparagus in your life: ⠀

- The dark purply tips and thick stalks are so tender and fresh, you can eat the whole thing from stalk to spear. ⠀
- The spears can grow up to 10cm a day so require hand cutting every morning, sometimes twice a day.⠀
- The recent warm spell means the stalks are sweet and tasty.⠀
- They contain vitamin K, vitamin C and eating it promotes healthy bacteria.⠀
- The season is short because growers stop cutting the spears in mid summer to allow the plants time to grow and recharge for the following year.⠀

And how should you enjoy them:⠀

- Simply steamed or griddled with a little olive oil or butter, sprinkled with sea salt and dipped in runny eggs.⠀

Spring is very much full sprung here in the Cotswolds now. FINALLY! And I'm getting about my Spring Feast supper club on FRIDAY 4TH MAY. .
I just love hosting supper clubs. This one is quite tiny (around 16 guests) and will take place in the very pretty market town of #ChippingNorton. The menu is inspired by the Cotswolds landscape and what's growing in my veg patch so expect lots of green: peas, herbs, wild garlic, rhubarb and edible flowers.

Julius is a farmer & a chef.
After training under the mighty @pweaver1984 at @noblerotbar, he decided to transform his garden in Suffolk into a productive farm and aim to towards a more self-sufficient lifestyle. He grows veg and rears livestock, some of which we hope to sell one day through Foodchain. -
But in the meantime, we’re connecting him to some suppliers who share his values. He’s going to take over our insta-stories giving his cooking demos, and talking about some of the produce we can connect him (and chefs) to.
