Yesterday’s lunch was Shepard’s pie with garden salad (literally, the lettuce was from the garden 😂🤪😋). If you haven’t made a Shepard’s pie and are interested in incorporating more plants into your diet, this is a great way to do so.

What you need:
*2-3 cups veggies of choice (I used onion, peas, carrots, green beans, & corn)
*4 cups vegetable broth
*3 lbs potatoes
*Garlic, salt, pepper, paprika to taste
.
Chop veggies and cook them in vegetable broth until tender. Taste and add garlic, salt, pepper, and paprika to taste. Meanwhile, cook potatoes in water until tender and then mash with potato masher, adding a bit of the potato water to thin it. If the vegetables and broth is too thin add a bit of the mashed potatoes to thicken it. Place the veggies and broth in the bottom of a pan and layer the mashed potatoes on top. Bake in oven at 450 degrees for 15-30 minutes or until lightly browned.

Cheesy wholemeal vegetable muffins, based on a recipe from taste.com.au. I made these even healthier by substituting wholemeal flour for white, and using reduced fat cheese. Also added some deliciousness by topping them with toasted sesame seeds and sumac. 😋

I’m not in the best headspace lately and i was not going to post if today hadn’t happened. I’ve been asked to join the swim team i was on 4 years ago, and god i want to so badly. I miss it so much and lately I’ve been missing it even more. I hated practice sometimes bc it was a lot and even back then my eating was disordered. I would eat ‘normally’ on Monday, Wednesday Thursday Friday and Saturday and binge on Tuesday and Sunday. I remember coming back from practice and i would eat 2 family size bags of Doritos a day and even more than that, then I’d move onto sweets...i was slightly underweight, I’ve always been slightly underweight bc I’m premature but now that I’m maintaining at a weight that won’t get me into inpatient, I’m still restricting a lot. I’ve relapsed with calorie counting so ik how much i eat a day and how much i burn from over exercising and i know it’s wrong but i feel scared to stop. My main concern with joining the team is that if i join, ill need to eat more bc it i don’t i will probably pass out during practice after 2 weeks from when i start (ik this bc ik how rigorous practice is) bc you cannot survive by swimming 6 miles every day 6 days a week with the amount that i consume, and second of all, I’d have to give up self harm. Self harm has been my coping mechanism for my intrusive thoughts since 10, I’ve self harmed in various amount of ways but it did start when i was in 5th grade, and it’s been going on for so long that I’m also scared to let that up, but i keep telling myself that I’ll be ready next year, but the truth is I’ll never be ready to give these up, but i NEED to stop harming myself if i want to live my life to the fullest, idk what I’ll do but i am considering the swim team very seriously

So I made Gumbo today. But not the typical gumbo. I didn’t have not one drop of seafood or meat in it! This gumbo is called Gumbo Z’ herbes! I used seven different types of greens! Easiest way to get loads of leafy greens in (other then having a salad) is blending them up in a smoothie. You can’t even taste the greens, it just tastes like banana 🍌🍌🍌🍌🍌
