One of my favorite meals for pineapple soy salmon and creamy redskin parmesan mashed potatoes, vegetable of choice today is balsamic brussel sprouts, my friends love this meal 😁recipe below 👇🏾Ingredients:
Mashed potatoes:
8 medium red skin potatoes
3 cups of chicken stock
Salt to season
1/2 cup of heavy cream
1/2 cup of parmesan
1/4 cup of sour cream
1/2 tsp garlic powder
1 tbsp of unsalted butter
Salt to season
Sauce:
1/2 cup of low sodium soy sauce
3/4 cup of pineapple juice
1/2 cup of brown sugar
2 tbsp of honey
1 tsp Chinese five spice
1 tsp smoked paprika
1 tsp lemon juice
1 tsp of garlic powder
1/2 tsp of onion powder
4 pineapple rings
Directions:
1. Wash and cut each potato into smaller pieces, add chicken stock and season with salt, cook on medium heat for 15-20 min.
2. Add all of sauce ingredients in a medium sauce pan and bring to a boil on medium heat for about 3-5 min, then turn to low and let simmer for 10 more minutes.
3. Wash salmon, pat dry and rub with old bay seasoning, heat 1.5 tbsp of olive oil on medium heat, add salmon and cook 5 minutes on each side. Add more oil if needed, cook longer if needed. Place salmon in sauce and let sit for about 10 minutes.
Plate mashed potatoes on a large dinner plate, top with 1 piece of salmon and pineapple, pour 1/4 cup of sauce over mashed potatoes and salmon. Enjoy with your fave sautéed veggies in my case it was balsamic brussel sprouts. Try with squash, or asparagus. You can make salmon the night before or hours before and let it sit in sauce to be reheated. My preference 😀.
