Turkey Breakfast Casserole!!🍳🥚
I finally had the energy to meal prep yesterday after being in the BIGGEST slump for the past 2 weeks. I’m blaming the weather, but it felt so good to be back in the kitchen and back on track with my eating.
This recipe is SUPER simple and won’t take you long to prep out. PLUS it’s super cheap if you’re living that budget lifestyle...if you haven’t checked out @aldiusa please do, your wallet will thank you💸..(you can find all the ingredients I used there).
•1lb lean Ground Turkey
•1 package sliced mushrooms •baby spinach (you’ll use about a handful or two)
•2 tablespoons chili powder •salt and pepper
•olive oil cooking spray .
•Preheat oven to 375. Brown turkey with chili powder, salt and pepper. While the turkey is cooking you can whisk together your eggs, salt and pepper in a bowl. Once turkey is cooked, place it in your 9x9 greased pan, pour egg mixture on top and then add your mushrooms and spinach. Pro tip- - - cook your mushrooms in a skillet for a few minutes to get the moisture out before putting them in the casserole. Cook the casserole for about 30-35 min or until the sides and top are slightly golden.
