While several of us in my family aren’t allergic to wheat or gluten, we are definitely sensitive to the gluten in modern wheat. Several international wheat gluten studies have found Einkorn to be non-toxic to sufferers of gluten intolerance, since it has a completely different non-mutated form of gluten, making it digestible for many with gluten sensitivities. Additionally, Einkorn wheat’s unique starch structure is much smaller and more compact compared to modern wheat, so it doesn’t spike blood sugar. In fact, the starches in Einkorn lower glucose and insulin levels in the blood after meals and maintains satiety longer.
Einkorn is the original “staff of life” grain, dating back to the beginning of time. It’s un-hybridized genetics (14 chromosomes vs 42 in modern wheat) and lower gluten (almost ten times less!) levels make it more compatible with the human body and easier to digest. In nutrition sampling tests, Einkorn has been found to be a “more nutritious” grain.
Einkorn wheat contains:
-higher protein, phosphorus, potassium and vitamin B6
-twice the vitamin A
-four times more beta carotene and lutein
-five times more riboflavin
-nine times less gluten
-prebiotic fiber (feeds good gut bacteria)
Why switch to the primitive, original Einkorn wheat?
In addition to many people stating that Einkorn is tastier than modern forms of wheat, it’s a healthier, more nutritious grain that is easier to digest. An improvement in digestion means that nutrients are better absorbed, ensuring that you have no tummy problems after consuming a delicious dish cooked with Einkorn flour. While Einkorn wheat is not gluten free, there is a lower amount, and the gluten in Einkorn lacks the high molecular weight proteins that many people can't digest. It is a great tool to help maintain a healthy gut microbiome. An unhealthy gut can lead to gas, bloating, indigestion, constipation, auto immune conditions, food intolerances, and other diseases such as dementia, Alzheimer’s and even cancer.
We’ve subbed all of our former modern flour recipes with Einkorn wheat. While our bodies all tolerate 100% Einkorn flour, we found that a 1:1 mix of G.F. & Einkorn flour makes easy recipe subs.
