Ever feel like you don’t have it all together? That’s me in this new (to us) kitchen and house. Their have been some pleasant surprises (that dishwasher man, holy upgrade!) and also a few stumbles. (But why do you only have right shoes?) Eventually these boxes will all be unpacked right? I also need to start getting it together for lunches and afterschool snacks, so as soon as I can find my mixing bowl these quick chocolate chip energy bites are first on my list. (Recipe in my bio ❤️ @onmykidsplate) Chewy, easy and kind of like a granola bar but better! These are a favorite snack around here and freeze well too. Peanut Butter Energy bites. 🥜 Are you craving cookies but don’t want to eat all the crap that’s in them? Try energy bites they take maybe 15 minutes to make. With that I mean dump the ingredients in a food processor and roll them into little balls. No baking involved!

Fun fact about oats. Oats contain beta-glucans which is a soluble fiber that has been seen to lower cholesterol, improve blood sugar control, and boost the immune system to fight cancer, in various studies.

Ingredients:

1 cup rolled oats
1 cup creamy peanut butter
1/2 cup ground flax seed
1/2 cups chocolate chips
1 tablespoon of honey
1 teaspoon vanilla .
Combined ingredients into food processor, and mix until ingredients are throughly distributed. Roll into balls and enjoy!

Tip: If you want the texture to be firmer or are worried about them melting set them in the fridge for an hour or so or even overnight and then enjoy.

How do you stick to a routine?

I’m an extrovert and a people pleaser, so having a buddy 👯‍♀️commit to a routine with me to hold me accountable is a huge motivator. I’ve been employing that strategy with my exercise routine lately! Until recently, I squeezed exercise in wherever I could— and I was starting to view it as an interruption to my work rather than the necessary release that it is!

Luckily Quentin agreed to join me in a morning exercise initiative! So we’ve been popping out of bed and hitting the gym/sidewalk/bike at around 6:30am for the past few days and it’s going well so far!

ENTER THESE BALLS! They’re bliss/fat/energy balls mostly made of nuts, seeds, and coconut and sweetened with a single date. Without a little food in my stomach before I exercise, I often get faint! So I pop one of these before heading out and CRUSH it at the gym (kinda😜). I’m working on some fun flavors for y’all so keep your eyes peeled for a recipe coming soon to le blog! #fresherica

Almond pulp energy bites 💪🏼

• I made almond milk a few days ago, and I used the leftover pulp for making for some energy balls. I didn’t follow any recipe, just added whatever I felt like adding and followed my instinct for the quantities, making sure the texture of the mixture would be firm enough to roll the balls. Then I put them in the freezer, and for being the first time they turned out to taste pretty well, kinda like carrot cake thanks to the carrot and the cinnamon. Ingredients bellow!
• Almond pulp + grated carrot + raisins + desiccated coconut + agave syrup + cinnamon + coconut oil

My lunch is most often super disorganized and not very pretty looking. 🤗 But today I thought I’d dress it up for you and show you some of the fun things I have to look forward to at lunch tomorrow. 🙃

Top Tray 🍱: Tahini Maple Energy Bites with fresh cherries! I’ve been obsessed with cherries recently. Trying to eat my fill before they are gone for the season. 😭 .
Bottom Tray 🍱: Steamed Kabocha Squash, roasted broccoli, sautéed miso mushrooms, roasted miso glazed eggplant. To make eggplant, cut eggplant in half and create shallow hashmarks on both halves. Mix together 1/2 tsp miso paste, 1 tbsp rice wine vinegar, 2 tsp maple syrup, and 1 tsp soy sauce. Once combine, brush mixture over eggplants and sprinkle with your favorite seasoning mix. I went with garlic, smoked paprika and salt. Pop in the oven for 25 minutes at 350F. I got a chance to sample everything, and really happy that this is what I get to look forward to. 🍽️

Maple Tahini Energy Bites
1 cup rolled oats
1 tsp cinnamon
1/4 tsp salt
3 tbsp shredded coconut flakes, plus extra to coat at the end
2 tbsp ground flax seeds
1/4 cup sunflower seeds
1/4 cup @soomfoods Tahini
1/4 cup maple syrup
2 tbsp cacao nibs 🍫

Place everything except cacao nibs in food processor. Close and pulse at least 10 to 15 times to combine. Mixture should clump together and should only be slightly sticky but easy to roll into balls. If mixture is too sticky, add a little more oats and pulse to get right consistency. If too dry, add 1 tbsp at a time of maple syrup. Once dough like consistency is reached, gently fold in the nibs. Scoop 1 tbsp of mixture on to clean hands and begin rolling them into balls. Roll Energy Bites onto extra coconut flakes and set aside on a plate, repeating steps with remaining dough mixture. Once complete, place in freezer to set for at least 15 minutes prior to serving. Remaining energy balls can be saved in the freezer for later use. ❤️

You guys asked for my superfood energy bites recipe so here it is!! .
🌱 1/2 cup pb 🌱 1/3 cup honey 🌱 1 cup oats
🌱 2/3 cup unsweetened coconut flakes
🌱 1/2 cup choc chips
🌱 1 scoop or packet of shakeology (I've used choc, cafe latte, and vanilla and they've all been 👌🏼)
🌱 1 tbl chia seeds
🌱 1 tsp vanilla

Mix well, put in fridge for 30 min, roll into balls, store in air tight container in fridge! Perfect grab and go snack! Also you can freeze some for later, enjooooooy!💕

My husband and I both love to snack... and a lot of the time it’s on unhealthy things that leave us feeling hungry. Well we have been making these for the past three years because they are actually filling! My husband and other family members just love them! Only a few ingredients and super easy... give these energy bites a try for your next snack! •••
2 cups oats🌾
1 cup peanut butter 🥜
2/3 cup honey 🍯
1 cup flaxseed🍂
3/4-1 cup chocolate chips
2 tsp vanilla

Combine all the ingredients in a bowl 🥣 and then refrigerate for at least 30 minutes. After refrigerated roll into balls. Store in the fridge in an airtight container. This will make around 2 dozen.

GAME CHANGER! Healthy no bakes 🍫 ..
These bites/cookies/bars are BOMB. And stupid healthy for you. They taste like no bake cookies but are so nutrient dense. They are a bit high on the calories but if you divided out into 32 equal portions and avoid eating the whole pan then you should be fine. Thanks @rainavsfood for sharing this recipe! I tweaked it ever so slightly because I ran out of oats and it worked awesome 😎 ..
1 cup peanut butter
1/2 cup coconut oil
3/4 cup honey
1.5 cup oats
3/4 cup ground flax seed
1/4 cup chia seed
2 packets chocolate shakeology
Vanilla to taste

Melt peanut butter, honey and oil change together in the microwave.
Add oats, seeds, vanilla.
Scoop out into parchment paper or I just placed mine in a brownie pan and set in the fridge to harden. ..
32 servings. 140 cals. 4p/9f/13c. 3g fiber!!

How important is food connection to you? .

I often get clients coming to me who don't cook & are scared to try. Deep down they want to but they have limiting beliefs that they 'can't'. The truth is, everyone can cook & I will make it my mission to stand by these clients until they feel confident & accomplished in their cooking abilities. Every recipe I create is user friendly, delicious & most of all, nutritious. There is a method to my madness so please read on if I haven't scared you. .

Changing our relationship with food is a complete game changer- simple. In order to do this, we must understand what food can do for us & then we must connect with it. Like anything in life, energy exchange is crucial & understanding something encourages empowerment. Preparing your own meals, physically & mentally connecting with ingredients & understanding their role will step your nutrition & overall health up a gear. Involvement is key. .

I have spent 2 hours today preparing my huge, favourite vegetarian curry from my client recipe pack & these orange infused raw cacao & maca balls. I didn't have a recipe for these but I played with what I had, it was fun & they taste amazing. So good I think they could sell in shops! So a bit of playing around has led to a beautiful result, what can you experiment with? .

✨3 ingredients Energy Balls:✨ Mix 1tbsp creamy Almond Butter or any nut butter, 1tsp raw honey and 2tsp raw cacao power. Mix until you get a soft dough and roll them into balls with your hands. Decorate with sesame seeds. -

Man patīk enerģijas bumbas, jo var pagatavot 5min, leduskapī/saldētavā var uzglabāt nedēļām ilgi un garšu kombināciju ir bezgala daudz 😀👍👍👍 Šoreiz laima - kokosriekstu bumbas:
🔸 1 glāze (~130g) mandeļu
🔸 1 glāze (~130g) dateļu bez kauliņiem 🔸 1/2 glāze (~50g) kokosa skaidiņu
🔸 1/2 laima sula
🔸 bik čia sēklu kraukšķim

Ja dateles ļoti sausas - tās aplej ar verdošu ūdeni un atstāj uz 5 min, tad nokāš. Visu liek virtuves kombainā un vužzzz vužzzz 1-2 min kamēr masa veļas bumbā.
Ar rokām saveļ bumbiņas - man sanāca 16 gb pa 20 gramiem.

Holla holla for a plate full o’ energy bites!! These things are a staple for #mealprepsundays and SAVE ME during any weekday hunger. .
•1 cup @bobsredmill gluten free oats (dry)
•8 medjool dates de-pitted, soaked for 5 minutes to make a bit softer, and then blended up in food processor. Side note: pictured is a fresh date because I used up all the medjools in the energy bites!
•2/3 cup toasted coconut flakes
•2/3 cup ground flax meal
•1/2 cup cocoa nibs
•1/2 cup nut butter- I used @wild_friends creamy PB
•1 TBSP chia seeds
•Scoop of unflavored @vitalproteins collagen peptides
•splash of vanilla or almond extract, this time I used vanilla
