LUNCHBAG! RECIPE! I added this home made sweet potato, yucca, ripe plantain beer/kambucha to my lunch pack and I love it (also pictured is my Bob Marley Squeeze of Sweet Condensed Milk for my coffees). Not only is it special to me and yummy, the indigenous populations in the Magical Amazon Region drink this chicha daily and I believe my Taino Casique Agueybana El Gran Sol also enjoyed this daily. It's filled with high fiber, nutritional sweet potato, yucca, and ripe plantain, and fermented to yumminess over a few weeks, filling it with a whole universe of happy probiotics and yeast.
Boil 3 ripe plantains, 3 medium sweet potatoes & 3 medium yucca until very soft. Use spring water if possible.
Mash in remaining water until smooth. I avoid the blender to avoid the harsh cutting blades in favor of more gentle hand mashing. I drink mine chunky, but if you prefer smooth just work the mash through a large mesh.
I also add 1-2 C of sugar or brown sugar to help with fermentation plus I like mine a little sweet.
I place mine, once cool, in an empty 5G water bottle and in the warmest part of the house. Cover the top loosely with fabric and check in after a few days to make sure fermentation has started and should be good to drink after about a week, and so far I have had good luck continuing fermentation and delicious tasting chica from the same batch for three weeks, longer if refrigerated.
