Some #meatlessmonday / 9 days / vegan friendly sandwich inspiration for you! I'm by no means vegan, but I do prefer to eat plant-based when possible. This sandwich has tehina with a dash of maple, roasted sweet potatoes, cucumber, tomato, and arugula all nestled between some amazing sourdough. It's a great template for a vegan lunch - roasted and fresh veggies (eggplant, beet, zucchini, avocado, mushroom, radish, lettuce...go wild!) plus a nut/seed based spread (cashew cream, tehina, nut butter), with some good quality bread.
