Weekend goals for those garden herbs!
Here is a super easy Herb Pesto Couscous Salad made with all sorts of fresh summer garden herbs and topped with toasted paneer cheese Recipe below Herb pesto Couscous Salad
1 cup couscous
3/4 cup boiling water
1 small red onion, thinly sliced
1/2 cup cubed paneer cheese
1 Tbsp olive oil
1/4 tsp sea salt
1/4 tsp ground cumin
1/3 cup chopped parsley
1/2 cup chopped basil
2 Tbsp chopped cilantro
2 Tbsp chopped tarragon
2 Tbsp chopped dill
2 Tbsp chopped mint
6 Tbsp olive oil
1 small zucchini , thinly sliced in long strips
1 fresh green chile, finely chopped
1 + 1/4 cup arugula or water crest leaves, chopped
Some green olives
Place the couscous in a large bowl and cover with the boiling water or stock. Cover the bowl with tight fitting lid and leave for 10 minutes.
Meanwhile, fry the onion and paneer in the olive oil on medium heat until golden. Add the salt and cumin and mix well. Remove from heat to cool slightly.
To make the herb pesto. Place all the ingredients in a food processor and blend until smooth.
Add the herb pesto to the couscous and mix everything together well with a fork to fluff it up. Now add the cooked onion and paneer, green onions, green chile and arugula or watercrest and gently mix. Topped with green olives.
