R E C I P E to make my BEEF SHIN STEW with POTATOES. Please bear in mind that I cook this in a pressure cooker. Therefor, cooking time is substantially reduced compared to cooking in a standard pot. I would suggest that if you aren't using a pressure cooker, multiply the cooking time by approx x2.5 and keep a check on the amount of water that's in the pot every 20 mins or so. *1 beef shin with marrow bone (approx 700-750g)
*5-6 medium potatoes, peeled and cut lengthways in half.
*1 medium sized onion, halved and finely sliced.
*1-1.5 tspn Himalayan pink salt,
*1-2 heaped tspn turmeric powder, *1/2 tspn cumin powder,
*1 level tspn paprika,
*1/2 tspn coarsely ground pepper, *1 tspn pul biber / crushed dried chillies,
*1/2 tspn chilli powder,
*1/2 tspn garlic powder, *1/2 tspn ginger powder *1 cup tomato passata *Water to cover.
M E T H O D
Add a good glug of olive oil to the pressure cooker / pot. Sear one side of the meat, salt it with 1/2 tspn salt, turn, sear and salt with 1/2 tspn salt. Add all spices and onions. Gently combine in the oil, add tomato pasata, combine a little again and allow to bubble for 1-2 mins. Add potatoes and enough water to cover the ingredients by a couple inches. Bring to a rapid boil with pressure cooker lid on, then turn to medium-low (induction 4) for approx 25-30 mins to cook in the steam. Once ready, meat should be tender, gravy full flavoured, and potatoes perfectly cooked. Add a little more salt at this stage, only if required. 👌🏼 Serve in a wide, deep dish, with warm pitta or naan on the side. Hope you try it! 😘 #signaturedish
