Okay so I made this AMAZING fig banana bread today and I’m in love perfectly moist, sweetened, and delicious!
I used the @valleyfig recipe but veganized it!
2 cups all purpose flour
3/4 cup cane sugar
3/4 tsp baking soda
1/4 tsp salt
3 very ripe bananas
3 tablespoons vegan butter, melted and cooled
3 tablespoons unsweetened apple sauce
2 flax eggs (2 tbsp ground flax seed + 5 tbsp water)
1/4 cup soy yogurt
1 teaspoon vanilla
3/4 cup chopped nuts (walnuts, pecans, or macadamia nuts)
1 cup @sunmaid figs chopped finely + slices for top (optional)
Preheat oven to 350 degrees F
Mix water and flax seed and place in fridge. Microwave butter and let cool
In a large mixing bowl, whisk flour, sugar, baking soda and salt
In a separate bowl, mash bananas. Mix in flax eggs, butter, applesauce, yogurt, and vanilla
Add flour mixture to wet mixture and stir with rubber spatula until just combined. Note, add some almond milk if batter is too floury. I added about 1/4 cup. Batter should be thick and pourable.
Fold in nuts and figs
Pour batter into loaf pan sprayed with nonstick cooking spray. Spread batter evenly and add slices of figs on top (optional)
Bake on center rack for 55 minutes or until toothpick comes out clean from center
