I used 20% Rye sourdough starter & 0.9% yeast as I started late in the day & needed it to get a wriggle on!!
Will definitely try this flavour combo in a pure sourdough as it is deliciously savoury & I’d like to push a darker bake next time, but that will need a fine balance with the high cheese content!
