Heard something interesting from hubby. It seems Vietnamese thinks Frog Porridge is considered Singapore's national dish! 😂 When they visit Singapore, they're sure to have it and apparently, there are restaurants in Vietnam selling 'Singapore frog porridge'! My favourite is Gong Bao Frog in claypot though. Love the savoury sauce with loads of spring onions, ginger and dried chilli.

Ever walked into a supermarket as a first-time #tofu buyer and been overwhelmed by the selection and variety? What even is #Tempeh?
__
Let's break it down
__
Tofu is product made from soy beans that have been soaked, blended with water and pressed into blocks and mixed with a coagulant. This separates the curds and whey of the soy (kind of like milk into cheese!)
__
#Calcium sulfate is the most widely used coagulant for tofu, primarily because it doesn't mask the taste of the soybeans, producing a more hard-textured tofu
__
The traditional coagulant is called Nigari, a naturally occurring component of seawater (which contains magnesium chloride)
__
The use of calcium chloride/sulfate as a firming agent for the tofu, also increases the calcium content to the tofu. *Swipe left

The type of tofu generally refers to the amount of water it contains
__
Silken (soft) tofu has the least amount of water pressed out of it, which you will find it crumbles easily, while super-firm has a more dense and hard cheese-like texture, as more water has been pressed out of it
__
The harder the tofu, the more it will hold its shape when slicing, cubing and during hard methods of cooking
__
You can also see how a more firm tofu holds more protein per gram in comparison to a silken tofu (swipe left), which is great #protein punch for any #meatless dish!
__
Like tofu, tempeh is made from soybeans, but uses WHOLE soybeans which have been fermented (using Rhizopus mold), which binds the soybeans together into a solid mass by the spores of fungus created from this #fermentation process (mycelium, the white colour produced in the tempeh)
__
Don't diss it before you try it though! Tempeh will definitely make you the "fun-guy" at the next holiday party. And the whole soybeans will certainly help you move things along the next day with their increased #fibre content!😜

This fermentation produces a more nutty and earthier flavour generally stronger than tofu. A brownish colour difference is only due to the decrease in pH from fermentation

FOOD HISTORY BELOW!!! When you want sandwich bread, but nowhere sells it made from scratch.
In January 1943, our great and powerful gubermint, with their infinite wisdom, banned sliced bread making claims it would save the tax payers money because sliced bread required heavier packaging to keep it fresh. "The wartime effort required everyone to make a sacrifice." Hell hath no fury like a woman scorned, and to take away sliced bread from a wife and mother to make toast for breakfast and sandwiches for lunches for an unruly "leave it to beaver" family, the power of sliced bread has never since been trumped by its high convenience factor. The ban last for 3 months until the people literally defied the government and continued selling sliced bread (a fight they could not win) Sliced bread is literally the greatest thing since itself. It is yet another example of the government trying yo fix one problem, and in turn, cause 10 more in its wake. Some things are best not fixed, no matter how much we think it needs it.

I got an educational lesson tonight as @homesomm13 and I made hot sauce.

When acid, such as vinegar, is added to garlic, the cell membranes in the garlic are disturbed which causes amino acids and the sulphur compounds in the garlic to mix.
.
This results in an enzyme known as isoallin to be released, causing the blue pigmentation.
.
The garlic is still safe to eat and there is no effect on the taste.
