Kashmiri Dahi baingan:
This is what I made with the eggplant i posted few days back. The recipe is by @cookilicious, a no onion garlic recipe and requires very few ingredients. I did tweak the recipe a bit to suit my family requirements like replacing the deep fry by shallow fry and also added lil Dhania powder but that was it. This is my first of many kashmiri recipes, I totally loved how the simple spices tasted so well along with curd. My husband is not a big fan of baingan like many other people I know but surprisingly he liked it more than me 😀. So if you are trying to get someone like eggplant do give this recipe a try. We have so many cuisines in India to learn and experiment with that even a life time will be short.
