Deviled Eggs Recipe // GFCF, SCD/GAPS, Low Oxalate, Paleo.

Ingredients:
12 eggs (pastured-raised)
1/3 cup mayonnaise (homemade)
1-2 teaspoons Dijon mustard
Sprinkle of salt and pepper

Directions:
Garnish with fresh chives, or even salmon roe, if you have it.

Cook the eggs by hard-boiling them. To do so, fill a pot halfway with water and bring to a gentle boil. Carefully lower eggs one at a time in the water. Set timer for 13 minutes, start timing once you start putting them in the water. Turn up heat until water is boiling again and then adjust heat down to a gentle boil, move eggs around in the pan so that the yolk does not settle to one side. Continue cooking until timer. Do not over cook – yolks will be greenish and sulfur-smelling.

Drain water, and rinse eggs in cold water until pot and water is cool.

Peel eggs. Slice eggs in half. Put yolks into food processor bowl with rest of the ingredients (mayo, mustard, and salt and pepper). Mix in a food processor.

Scoop yolk into white halves. Garnish with chives, salmon eggs, chopped olives, or anything, or serve them plain.

Everything in moderation- I’m not saying you should never eat a cookie.. Today’s ATI University was hosted by Dr. Julita Baker, a lecturer at University where she teaches The Science of Food Choice. Dr. Baker’s mission is to help individuals make value-driven food choices for long term health.

This topic is especially important to our industry as maintaining a healthy lifestyle in the A/E industry can be very challenging. Our jobs can often require long hours of sitting at our desk, facing a computer screen all day, and straining our eyes to catch the smallest details of a given architectural or engineering project. This often times leads to stress, long hours, and less than adequate convenient food choices.

Today’s University was a great reminder that maintaining a mentally and physically healthy lifestyle – starting with the food we eat, is essential as it plays a much larger role in our overall productivity, quality, and creativity.
As architects and engineers – we understand the impact of the built environment on human health and well-being but oftentimes we forget about our own. Today was a simple reminder to be mindful, so that we can continue to shape the world we live in one step at a time.

Super yummy and easy weeknight meal - Creamy broccoli soup with tomato basil and avocado pressed sandwiches 🌱

Soup
Pulse broccoli, carrot and onion in food processor until minced. Place in pot and cover with vegetable broth and heat to boil. Simmer for 15 minutes. Add more broth. 1/2 cup of cashew cream. I seasoned with garlic, a dash of cumin, a dash of nutritional yeast, salt and pepper 👌

Meet Dr. Lisa Parsons, our lead psychiatrist and addiction specialist, in "What the Food?" film! In her career, Dr. Parsons has built upon her knowledge of psychiatry and addiction. With her experience in medical school at Wayne State University in Detroit, Michigan, Dr. Parsons branched out to new horizons in Phoenix, Arizona. At this location, she worked at Banner Thunderbird Hospital on the medical floors of the psychiatric ER and in-patient psychiatry.
After her time in Phoenix, Dr. Parsons moved to Prescott where she is currently the Medical Director of the Reflections Recovery Center and Northern Center, which is the largest community mental health center in the Prescott community. Dr. Parsons spends her time at the mental health center helping those affected by addiction. Her treatment-focused approach is centered on the biological contributions for both addiction and psychiatric disorders. Both of these avocados look the same but how will I decide on which is ready. Timing the perfect avocado is an art. You don’t want to hit it too early and you definitely don’t want to catch it too late. Here are a few tips to avoid getting Guac Blocked.
1. The Look: Ready too eat avocados are not usually bright green. The tasty ones are a darker green but like the picture this can be misleading. So then we pay attention to...
2. The Feel: Hold the avocado in your palm and gently squeeze it (be careful not to put a finger through it that’s an Avaca-No) if it’s still firm give it some more time. If it’s soft it might be finally ready to smash. If you’re still not sure...
3. Check under the stem. If it’s light green, you might want to wait on it. If it’s browning you’re right in our sweet spot and if it’s black start over.

​The quickest prepped meal I’ve ever prepped. I made four of these to get me through the week! I think it took me around 30 mins total!
1 box of @eatbanza
1 lb ground chicken (from @milkandeggscom)
4 cups spinach
1 lb cherry tomatoes
1 package Microgreens (rainbow mix)
Tomato Sauce
•••
Cook pasta according to directions. Saute ground chicken over medium heat for 5-10 minutes or until it’s no longer pink. Assemble in Tupperware containers – ideally ones that have different sections. One section with pasta & chicken. The other with spinach, tomatoes & microgreens – see my story to get an idea of what this looks like. I keep the pasta sauce on the side until I’m ready to eat! RASPBERRY verses PEPPERMINT 🤷🏻‍♀️ Yep it’s raw, vegan and super versatile. Once you master the base recipe you can add whatever you like!

FOR THE BASE
1 cup almonds
1/2 cup shredded coconut
2 tbs. coconut oil
1 tbs. raw cacao
Pinch of salt

FOR THE FILLING
1/2 cup coconut oil
1/2 cup canned coconut milk
1/2 cup raw cashews soaked overnight (or at least 2 hours)
1/3 raw honey or maple syrup.
Pinch of salt.

FOR THE ICING
1/2 cup coconut oil
3 tbs. raw cacao
1 tbs. rice maple syrup.
.
.

NOW WHAT
Line a 20 x 20 cm (8 x 8 inch) baking tray with baking paper
In a blender or food processor place all of the base ingredients.
Whiz until a crunchy butter forms.
Transfer this in to the lined tin and spread out evenly, covering the entire base.
Place in to the freezer.
On to the filling. Rinse your food processor first.
Drain and rinse the cashews.
Place all of the filling ingredients in the blender
Blend on medium speed until super smooth.
Place the filling on top of the base and smooth out the top.
Place back in to the freezer.
Rinse the blender.
Now for the icing. Place all of the ingredients in the blender.
You don't need to melt the coconut oil first as the friction from the blender will slowly melt it all together.
Spread the icing on top of the filling and place in to
Fridge.

This is the basic base recipe, now you get to choose your flavour!
With the peppermint slice, I added 1/2 teaspoon of spirulina and 1 teaspoon of peppermint extract or equivalent in essential oil to the filling section of the recipe and for the pink one I added 1/2 cup of frozen raspberries and a teaspoon of beetroot powder. Vegan Zucchini Pizza Boats

Does your tummy hurt after eating Zucchini and other Nightshade Foods?
Not everyone can digest Nightshades effectively, for many, Nightshades can cause inflammation, painful gas, bloating, autoimmunity flair ups and leaky gut.

Nighshade Plants such as zucchini provide a type of bacteria which release large amounts of methane gas into your intestinal tract during digestion... Although Zucchini and other Nightshade plants have great vitamins and nutrients, it is important that you pay attention to whether it agrees with your body!
It can be hard to diagnose specific nightshade problems, so it's best to eliminate all nightshades from the diet for at least 30 days to determine if symptoms improve. Adding them back in, one at a time, can help to identify if one nightshade is a problem, or if the whole category causes symptoms to return.
Remember, just because a food is a fruit or veggie, it doesn't mean it is healthy for your particular body! 🙂 🌱🥔🍆🌶️🌱🍅🥔🍆🌶️🌱 These Zucchini were cut in half, lathered with Avocado oil, fresh minced garlic, cracked pepper, sea salt, homemade sauce, vegan cheese and fresh basil from my garden... I broiled them for about 23 minutes then allowed them to cool for about 12 minutes before serving.
