This is nacho typical taco Tuesday. See what I did there? 😂 Here we have bbq chicken nachos and it’s one of the easiest thing to make. I’m willing to bet you have most of these ingredients. Ready?
One bag of @artisantropic plantain strips or cassava strips (I used both here because they’re awesome)
Leftover chicken shredded and tossed in bbq sauce
Sliced red onions
Vegan shredded cheese (or regular cheese if you can tolerate it)
Fresh chopped cilantro
Preheat oven to 425°F. Layer half the bag of @artisantropic strips on the bottom of a cast iron skillet or baking sheet. Top it with bbq chicken, crumbled bacon, red onions, diced tomatoes, shredded cheese, and cilantro. Repeat to get two layers. Put skillet into oven for 10-15 minutes or until cheese melts and everything is heated through. Serve with guacamole and sour cream on top.
