El pasado lunes me perdí un evento genial de la mano de #LaPoda @bodegasvinamayor y no pude disfrutar de todas las explicaciones de su enóloga, además de conocer más a fondo su perfil gastronómico y las múltiples opciones de maridaje.

Pero como tengo sus 4 varietales, hoy hemos decidido hacer una comida de lujo maridando el Albariño con este plato peruano que he versionado.

Un ají amarillo hecho con soja texturizada y quinoa, en sustitución de la gallina y el arroz respectivamente. No hace falta que os diga que en casa ha volado... Os dejo la receta en mi canal de Youtube> (Link en mi perfil).

Flavourful and luscious Potato and Peas curry with fresh winter peas and New potatoes in pressure cooker ... So so good with steamed rice or Naan/paratha.🍛

Punjabi style city but with less oil. It comes with an Achari Twist.

INGREDIENTS
🔸2 Cup potato cubed
🔸1.25cup Peas shelled
🔸1 tsp coriander powder
🔸2 Tbsp mango pickle
🔸1 cup tomato puréed 🔸1/2 cup onion paste
🔸1/2 tsp turmeric powder
🔸1/2 tsp chili powder
🔸1/2 tsp salt
🔸2 tbsp vegetable oil
🔸1/2 tsp cumin seeds
🔸1/2 tsp fenugreek seeds
🔸2-3 green chillies chopped
🔸2 Tbsp yogurt/curd

METHOD .
1.Heat oil in a pressure cooker or thick bottomed pan and add cumin seeds.After one minute or so when cumin seeds start spluttering, add onion paste and saute for 4-5 minutes till onion become light brown in colour.
2.When onion are cooked add chopped tomatoes,turmeric, red chiili powder and cook till they are mashed .
3.Now add 3-4 tbsp of water and cook the masala for 5 minutes or till it stops sticking to bottom.
4.Now add potatoes and shelled peas, cook for 5 more minutes and add powder and mix them with the help of ladle. Add chopped mango pickle.
5.Add one cups of water and cook till two whistles if you are cooking in pressure cooker or
6.if you are cooking in normal pan cook it covered till potatoes are well cooked and tender generally that will take about 20-25 minutes on slow heat.
7.If I am serving with rice I prefer this texture and when I am planning to serve it with poori parantha I mash 7-8 cubes of potatoes with the help of ladle and cook for 2-3 more minutes to make a thicker gravy.
