Panettone, an Italian Christmas sweet bread, a dried fruit filled cake like bread that is simply divine. Huge thanks to King Arthur Baking School for introducing me to making lovely Christmas cake. I look forward to baking panettones at Christmas and throughout the winter season. It makes marvelous gifts for neighbors, friends, family, teachers, church and workplace. Eventually I aim to make the traditional sourdough version which will indeed be a monumental challenge.

I met an elderly gentleman today and we were talking about work life balance. One thing that really struck me was he didn’t want his children to end up being a cab driver like him, he wanted them to have a good education and do something big in life. There is so much to learn from one’s disappointments in life, just by listening to their story. The takeaway is, at some point in our lives we may have not been happy with how our lives shape up but there is always hope for a better tomorrow. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Bacon and broccoli that I cooked up on my brand new beautiful blue baking sheet (see my Story for a close up of this beauty). I didn’t even know they made baby Blue baking sheets but now that I have one, I’m OBSESSED. Oh, and the broccoli is pretty good too.
I chop up fresh broccoli, drizzle some @kasandrinos all over it, add @primalpalate Garlic & Herb seasoning, and then top with diced @pedersonsfarms bacon.
Bake at 425 for 30 minutes, then hit it with the broiler on low for 5 minutes.

Panettone, a lovely Italian Christmas fruit cake/bread. Thank you King Arthur Baking School for teaching me how to make this special holiday bread. Indeed I’ve been inspired and fallen in love with this lovely fruit filled cake. My childhood Christmas memories are filled with gifted fruit cakes, but panettone is a world set apart from dried fruit nut blocks. It’s perfect at breakfast and holiday parties.
Persimmons are one of my fave fruits to have in the fall. They're perfectly sized, super tasty, and really convenient to take to work for a snack.
They're also a healthy addition to your diet as they have lots of vitamin C, fiber, antioxidants and some minerals such as potassium, manganese, copper, and phosphorous.
Vitamin C is an essential antioxidant that helps keep us healthy, so regular consumption of vitamin C from plant-based foods is highly recommended.
