New blog recipe! That’s right, I have a super fun and easy recipe idea for all of you that's perfect for this holiday season. I've already made it twice so you *know* it's good! And I love how easy it is. I teamed up with @Amyskitchen for this particular dish, because they're my go-to frozen food brand. Y'all know I'm all about them burritos! Anyways, back to this recipe. ;)
First, you start off with a frozen Amy's pizza, the roasted vegetable one. It's already vegan and because it's only vegetables and no cheese, it's the perfect blank canvas to doctor up for serving. The crust is fluffy with a nice crunch, similar to focaccia. And the base is made up of caramelized onions topped with marinated organic shiitake mushrooms, roasted red peppers, and marinated artichoke hearts, plus a drizzle of balsamic vinegar. Off to a good start already! To make this a holiday-friendly pizza, I add festive ingredients like Brussels sprouts infused with citrus, toasted hazelnuts, store-bought almond ricotta cheese (you can use any nut cheese you can find), and, the secret ingredient, small dollops of cranberry sauce, which gives the pizza just the right sweetness. I can't tell you how good this pizza is! I literally ate the whole thing myself but it's perfect for an appetizer during a busy holiday season.
