Finally time for the pasta course with the beautiful supplements presented earlier in the meal! The dish was house made chitarra in prawn sauce, blanketed by Hokkaido sea urchin, oscietra caviar, and finished with a spot prawn and prawn foam. The pièce de résistance was the prawn head press which was used to scour every last bit of the head juice out, giving the dish a fuller concentrated prawn flavour. There certainly was no luxury spared with this dish which was admittedly one of the most ornate pasta courses we have had! The combination of fresh pasta, sweet prawn, creamy sea urchin and briney caviar was delectable with thoughtful texture contrasts that changed bite to bite. The same black truffle dough accompanied this dish as with the previous one which we used to wipe the sauce clean!

Spinach and ricotta cheese raviolo with Japanese egg yolk at the center. Above, was a heaping spoon of oscietra caviar and gold foiling for a lavish touch. The raviolo was encircled by a parmesan foam with dots of white truffle oil. Once the egg yolk was broken, the lush liquid oozed out onto the foam creating a heavenly, rich mixture that was balanced by the salinity of the caviar providing an oceanic contrast. The mild ricotta brought a freshness to the dish and a lightness as similarly seen with the light texture of the parmesan foam. To accompany, a black truffle fried dough to dip in the sauce after enjoying the pasta
