Bele Casel- Colfòndo
This lovely Prosecco made out of the classic grape Glera, Bianchetta Trevigiana and Perera is an organic wine which is picked by hand in the Asolo Prosecco wine region. The way the winemaker made the wine is not ordinary. the grapes are soft-pressed with a pneumatic press followed by static racking of the must and temperature-controlled fermentation with cultured yeast. The wine is then aged on its lees in stainless-steel vats for 3 months. The second fermentation is on the bottle without disgorgement. This means more flavor and for the looks a cloudy wine. .
Unlikely like other prosecco you can shake the bottle for use, so the flavors gets more intense. In the glass the color of the wine has a straw yellow color and has persistent bubbles. On the nose a mix of fresh fruits like lemon and white grapes, but also toast. Because of the second fermentation the wine gets this typical yogurt taste, is crisp and ends with fresh fruits like green apple, lemon and minerals. You can combine this gorgeous prosecco with shellfish, salted meat or use as an aperitif. .
