My first attempt at the famous @traderjoes cauliflower gnocchi😍 I’ve been seeing this everywhere as one of the best gluten free pasta alternatives and its whole 30 approved so I just had to make it for dinner! I just sautéed it with lemon olive oil, zucchini, and cherry tomatoes and omg it was SO delicious! Even though there’s no cheese in it it tastes kinda like cheesy potatoes? I know this is gonna be one of my go-to meals this winter when I want some warm comfort food.
Also, to give you a little update on how Whole 30 is going, I’m leaning on my almond butter and frozen blueberry obsession to get me through the sugar cravings😂 but by now my bloating and stomach issues have stopped and I actually feel like my digestion is working really well! Also my skin has cleared and I’m starting to feel less fatigued. So I guess I’m over the withdrawals hump, looking forward to the rest of the diet and all the great meals and snacks I’m gonna come up with!
