Jalapeño Popper Chicken WonTons
This is a super easy recipe & one you’ll love! We have become obsessed with wontons in my house. They are so versatile and add a crunch that cures the itch for fried foods & yummy appetizers.
•1 Brick (8oz) of fat free or 1/3 fat Neufchâtel Cream Cheese softened
•1/2 cup shredded or shaved Parmesan cheese
•3 tsp minced garlic
•2/3 cup shredded mozzarella cheese (reserve 1/3 cup for topping)
•2 slices of deli Swiss cheese (chopped into smaller pieces)
•1/3 cup Real Bacon Bits
•1 can of white chicken meat (drained & washed)
•1/4 cup of pickled Jalapeño slices (chopped)
•1/4 cup chopped yellow onion
•24 WonTon Square Wrappers
In a microwave safe bowl combine cream cheese, Swiss, Mozzarella, Parmesan cheeses, minced garlic & bacon bits. Heat in microwave in 45 second intervals until melted & creamy.
In a skillet combine jalapeños & chopped onion and sauté on medium heat until onions appear translucent. (2-4 minutes) Add in chicken and heat for 4-5 more minutes. Transfer chicken, jalapeño & onion mixture into cream cheese mixture. Stir thoroughly.
Spray pan spray lightly in the cavity of muffin tin. Place wonton wrappers in each muffin cavity and press the center down. Place in 375 degree oven for a few minutes (about 5 give or take) to crisp them up a bit. Pull out of oven and using a cookie scooper (or a little more than a tablespoon) put mixture into each wrapper. Sprinkle each one with the mozzarella left over and bake in oven for about 7-10 minutes or until desired browning/crisping has occurred.

•••••••••• I love these served with steamed veggies! You can enjoy 1/2 a serving and more veggies for a lower Calorie option too. These babies are very filling & yummy!
