The joys of having such a restricted diet; always packing a to-go bag of snacks for any occasion. 💃
Today I had my best friends baby shower and helping getting the food ready yesterday, I realized there wasn't going to be very much I could eat. So today I packed enough snacks to make sure I could make it through the shower without 1.starving and 2. Not upsetting my stomach. 🧚‍♀️
Twas a success!!!! 🥳
Except the minor part that I left the left over snacks in the fridge. 🤦‍♀️💁‍♀️
Staying within the guidelines that work for you does not have to be that hard at all.
I took sugar snap peas, ranch, black cherries, left over chicken and veggies, a banana, lentil chips and my spinach wraps!! 🤤
I ended up eating only my sugar snap peas and my cherries. 😅
I did eat a few of the foods I could eat that were there.
Needless to say, I actually stuck to my plan even though I so badly wanted just about everything there was to offer. 😆
I am very happy I did though, or I would be in a world of hurt right now. 🙆‍♀️

One of the more healthy things I’ve eaten this holiday. Everything in moderation, even moderation I say 😉. It’s been a wonderful week in France. Although frankly as long as we’d had a pool and a beach we could have been anywhere in the world as far as the kids were concerned. So... this was based on a @lizearlewellbeing recipe I saw and couldn’t remember too well, but it turned out just fine (made for 6, demolished by three of us...). Chop 3 aubergine and a whole cauliflower and toss in a marinade of 3tbsp olive oil (I’m sure the original recipe used sesame oil but that was a push in le supermarche 🤣), 1tbsp white miso paste, 1 tbsp honey, a bit of water to loosen it up a bit, and the juice and zest of a lemon. I roasted it in the oven at 200 degrees for 45 minutes. This would have been heavenly by itself but to bulk it out I made a couscous salad with 200g couscous, one onion finely diced and cooked gently with a pinch of cumin and another tbsp of the miso paste. I added the seeds of half a pomegranate and a couple of tbsp of mint. Summer on a plate. And not an 🥑 in sight 👀. This afternoon I met the most wonderful bunch of pickling aficionados at a pickle swap in the city 💓

I was invited along to give a talk on the benefits of pickling and fermenting for gut health and also got to take part in the swap. Look at all those delicious pickles and preserves! 😍 A swap meet is such a fabulous way to enjoy a varied bounty.... and variety is something our guts love!

Bulgar Wheat Salad 🌱 Apologies for the lack of posts, I moved house (again) and I’ve been very busy. 😞 But this is a lunch I made myself the other day. It was a bulgar salad with tomatoes, cucumber, peppers and spinach. 🥗 I dressed it with sesame oil, lemon, salt and pepper. 🍋 I also sprinkled some cumin and turmeric in the bulgar also. I’m a little late to the posting - but my husband bought me this stunning handmade 5.5L crock from @pom_me_granite and the Ferment for Good book from @thefermentary 💙 What a joy to include them as part of my inner city fermenter’s life 😊

I’m going to love settling in with this book but think I will first christen the crock with a batch of kimchi from the book Ferment by @hollydaviswholefood Seems fitting since she is the wonderful lady and friend that taught me how to ferment and the one I continue to go to with my fermenting woes 😂 .... and successes 😀 There’ll be plenty more of her fermenting classes for me in future. ....and now that I also know about The Fermentary I look forward to joining their online community too 😊

Travelling with IBD can be a dread & you have to be super organised and make sure you have all your meds & foods with you. 🙏🏻 So I thought I would post what I packed for myself the other day when I travelled back to the U.K. 🌍 As we have to be so particular with our diet - I am 90% plant based, I eat eggs occasionally. My lunch consisted of a grilled fennel, spinach & kale pasta pasta, with lemon, garlic and 2 tbsp Greek yoghurt. I don’t usually have dairy, but yogurt can contain lots of probiotics which are great for your gut. And right now I think my gut needs them! 🌿🌿 My breakfast was the green smoothie, which I’ve posted before, and for snacks I had a Nakd bar, banana, apple & a pita. ✅ Simple, basic and inexpensive snacks for those with IBD. 🌈 Would love to know other tips for travelling with IBD and what to-go foods worked for you....
