I do my absolute best to stay as healthy as possible while traveling but that isn't always easy. Its not always fresh fruit for breakfast. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
After 4 years of travel we have figured out what works and what doesn't. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
How do we keep going with our jam packed adventures, horrible flight schedules, poor food options? One HUGE positive influence are those colourful capsules. They are giving us 30+ servings of extra fruit and vegetables everyday so even when we cannot get in a good serving through our food for the day we know we are covered.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Since being consistent with taking these, we have noticed a huge difference in our travels. We are less tired, less sick. NO JETLAG! Skin stays clear and we have the energy to just keep going day after day.

We have been taking these guys for over 5 years now but we have only become consistent taking them when traveling this last year and the difference is incredible!

INGREDIENTS⠀⁠
1 tablespoon olive oil⠀⁠
1 medium onion, sliced⠀⁠
1 medium red bell pepper, sliced⠀⁠
2 cloves garlic, minced⠀⁠
2 cans (14 oz diced tomatoes)⠀⁠
1 teaspoon ground cumin⠀⁠
1 teaspoon paprika⠀⁠
1 teaspoon coriander⠀⁠
Salt and freshly ground black pepper⠀⁠
6 eggs⠀⁠
Fresh cilantro, for garnish⠀⁠
Crusty bread, for serving⠀⁠

INSTRUCTIONS⠀⁠
1. Heat olive oil cast iron skillet over medium heat. Add the onions and peppers and cook for about 10 minutes until the onions become soft and translucent. Stir in garlic and cook for an additional 1 minute until the garlic becomes fragrant.⠀⁠

2. Pour in the tomatoes, and add in the cumin, paprika and coriander. Season with salt and pepper. Bring to a boil, then reduce the heat to low and simmer until the tomato sauce begins to thicken like a stew, about 10-15 minutes.⁠

3. Create 6 small wells in the tomato stew. Gently crack the eggs into the skillet over the tomatoes in the wells formed. Season with salt and pepper. Cover the skillet and cook until the egg whites have set, about 10 minutes.⠀⁠

4. Garnish with fresh cilantro and serve with crusty bread ⁠or pita. ⠀⁠

Pretty sure this was the gluten-free/dairy-free pasta salad of my dreams 😍 and so easy to throw together.⁣

In my bowl:⁣
- a handful of cherry tomatoes, halved⁣
- half of an english cucumber, chopped⁣
- a few slices of red onion⁣
- 1 organic black pepper chicken sausage (@sabatinos_sausages)⁣
- 1/2 cup cooked + cooled @eatbanza chickpea pasta⁣
- some crumbled @kitehillfoods almond milk ricotta⁣
All tossed in @kaarifoods greek dressing + lots of cracked black pepper.

Easy easy zucchini bread 🍞 that you are all going to want to make. I hope you guys enjoy this one! 2 1/2 c almond flour 1 1/2 t baking soda 1 t cinnamon 3 eggs 1/3 c coconut sugar (or 1/4 c maple syrup or honey) (add more if you like it sweet, I don’t like it too sweet!) 2 shredded medium zucchini’s (pressed with towels or paper towel to get as dry as possible) 1/4 c plant milk, if needed mix and pour into a parchment lined loaf pan. Bake 350 for about 35-40 minutes, checking center before taking out. Optional, but recommended: add some chopped up @hukitchen chocolate bar to the top before baking! Sooooo goood.

Breakfast for diner for me tonight 😋 I was really trying to put in the least amount of effort possible to make dinner but wanted something light, filling, and flavorful - so a cheesy spinach omelette and simple avocado toast were just a no brainer! I came home from a long day and all I really wanted to do was make some popcorn, put on Friends, and call it a night. This breakfast plate took me 10 minutes to put together and most definitely is full of more nutrients than the popcorn would have been 🥑🙌🏻 So simple. So fast.

Cheesy Spinach Omelette:
2 eggs, big handful spinach, 3 tbsp. finely chopped onion, small handful shredded mozzarella chz , small handful shredded sharp cheddar chz, s+p for seasoning .

Simple Avocado Toast:
1 piece 12 grain seeded bread, 1/2 avocado, s+p, sprinkle of aromat

Nola has a fun event for the month of August called “Coolinary” where restaurants with fine cuisine integral to the city offer 2-3 course meals for a special offer 🤤
Last night, Shreya and I went to Cavan — an Irish owned restaurant serving American southern cuisine in an old Victorian mansion from the late 1800s 🤓
10/10 will go back again because I’m dying to try their zucchini beignets that were on the regular menu

Aaand that’s a wrap, Austin! 👋🏻 Leaving the 100-degree heat with a 100% full heart and 100% full stomach (🌮🍹😌) Spent two pretty amazing days with three pretty amazing gals, and returning home with some pretty amazing memories (+ some photos standing in front of some pretty amazing murals 💁🏼‍♀️).
