Breakfast for diner for me tonight 😋 I was really trying to put in the least amount of effort possible to make dinner but wanted something light, filling, and flavorful - so a cheesy spinach omelette and simple avocado toast were just a no brainer! I came home from a long day and all I really wanted to do was make some popcorn, put on Friends, and call it a night. This breakfast plate took me 10 minutes to put together and most definitely is full of more nutrients than the popcorn would have been 🥑🙌🏻 So simple. So fast.
Cheesy Spinach Omelette:
2 eggs, big handful spinach, 3 tbsp. finely chopped onion, small handful shredded mozzarella chz , small handful shredded sharp cheddar chz, s+p for seasoning .
Simple Avocado Toast:
1 piece 12 grain seeded bread, 1/2 avocado, s+p, sprinkle of aromat
