I noticed during the week one of our #grannysmithapples went walkabout, either a bird got it or the wind has blown it off or someone plucked it, anyway it's disappeared into the ether. Today I picked the four remaining apples and made an #applepie
Sliced up the apples with #missmaaike helping herself to the peel, soaked them in water to stop from browning while I defrosted the pastry.
Our neighbour the baker had gifted us some GF puff pastry she had leftover from a test bake. It has been in the freezer a while now, so to use it up I thought it'd work for this pie. Sprayed the lined loaf tray with olive oil to prevent sticking.
Drained the slices and added some white sugar, cinnamon and cloves.
Mixed it all together.
Plonked it into the pie base.
Used the remaining pastry to create a lattice. Egg washed and a bit more white sugar sprinkled over the top.
In the oven at 180C for 35 mins, turned it after 20mins.
Sliced it up and having it with the coffee I took two hours to make. Seems getting distracted while baking and feeding kids and saying goodbye to guests gets in the way of making coffee.
Surprised at how well the GF puff pastry held up, having used some in the past and not really experiencing much "puff". This one is nice and crunchy and well suited to this pie.
