Filet mignon on a weekday?! Who am I? lol this cut is usually reserved for those special celebrations for us, but with @butcher_box you get whatever you get and I love the variety!The last box we got 2 filet mignons, so I decided to make that with some garlic “butter” made with ghee, fresh garlic,parsley, rosemary, thyme and salt. Mashed up some sweet potatoes and Japanese yam and some chicken stock and dinner is served! .
You may be wondering where the greens are here...well, this is the result of what happens when you have to go grocery shopping and you gotta make dinner happen. So, I used the 3 sweet potatoes and 1 Japanese yam that are probably about to go bad soon and tapped into our frozen meat stash to make dinner. I try to have greens with every meal, but if I don’t for a meal, it’s ok and I just try to make up for it the next day! Life gets busy and adding unnecessary stress really isn’t worth it. .
