I love the heat. Even the humidity doesn’t bother me. So summer is my jam. This 90-plus degree weather all week in NYC? Ahhhhhhhh 😊 How about you—are you loving this, or suffering through, or somewhere in between?
I do find that I want less to eat for dinner in the summer, and that’s where this salad comes in. It has all the best summer stuff: watermelon, heirloom tomatoes, fresh mint from my little terrace garden. Plus, grilled halloumi. I’m not a huge cheese person—I mean, I like cheese, I’m just not one of those “cheese is life!” folks—but I cannot resist halloumi. Especially grilled. OMG. I could eat a whole block by myself. Um, not that I’d ever do that... 😇
Anyway, put it all together with a really simple vinaigrette with a little sweet tang from ancho chile powder, and you are good to go.
