Vi snakket om hva sann styrke er, om å tåle å ikke vite hva fremtiden bringer (dvs å VELGE å være åpen istedenfor å planlegge alt. Om å smile varmt til de som vil presse deg inn i en bås, og om å våge å gå sin egen vei. Om å være kvinne og tørre å være sann mot egne behov, og leve det livet man ønsker - uten skyld og skam. Og om det er slik at kvinner oftere blir sett på som egoistiske når de gjør det...enn menn? 💚 Vi var også så heldige å møte veganer, forfatter, mindfulnesslærer, NARMterapeut (og mye mer) @linn.stokke - klart det, på et sånt sted!
Jeg har nettopp skrytt av boken hennes (og datteren) på Stories - den er så bra! Følg, følg! Himmel, det er så utrolig mye bra kvinner rundt omkring! Enormt - det er en revolusjon 🙌🏼 Vi snakket selvsagt om den friskt (må slutte å si «sjukt god» gode maten...

Lunch Preps!

Fresh cucumber and tomato salad with chickpea, potato, jackfruit and kale healthy sloppy Joe.

Pulse in a blender: 1 15oz can of chickpeas with their liquid, 1/2 sautéed onion, low sodium no sugar added tomato sauce, 2 tbsp organic maple syrup, and 2 tsp mustard powder. Transfer to a wok, bring to a boil. Reduce heat to medium-low and cook, covered, until flavours have melded, 5 minutes. Stir in kale and cook until kale has wilted, 2 to 3 minutes. Season with salt and pepper to taste.

Meanwhile, stem sweet and red potatoes and sauté jackfruit in low sodium vegetable broth.

Add potato and jackfruit to sauce to heat through.

Enjoy for lunch or dinner 🍅
