This is so delicious. I love this recipe! It is superfood powered, and is perfect for brunch or even dinner! The kale contains the highest levels of antioxidants, Swiss chard covers more than 100 percent of your daily vitamin K needs, and spinach contains many flavonoid compounds which protect against many cancers.
Baked Eggs with Superfood Greens
2 tablespoons olive oil
1 cup sliced yellow onion
3 garlic cloves, minced
5 cups kale leaves, stemmed and chopped
5 cups Swiss chard, stemmed and chopped
2 cups spinach leaves
3 tablespoons plain Greek yogurt
4 tablespoons grated Parmesan cheese
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon sea salt
Freshly ground pepper
4 large eggs
Sliced French Baguette
1. Heat the olive oil in a medium ovenproof skillet, over medium heat. Add the onion and garlic and sauté until tender, 4 to 5 minutes. Add the kale, Swiss chard and spinach, one cup at a time, and sauté, tossing, until just tender. Remove from heat.
2. Stir in yogurt, 2 tablespoons of the cheese, the lemon juice, salt, and black pepper to taste.
3. Crack the eggs on. Top. Sprinkle with remaining cheese. Bake until set, about 10 minutes. Serve with sliced baguette.
