Friends, that Gumbo last night was naaassty. It was like that time @Disney made that roux-less Kale gumbo and everyone revolted. There are gumbo rules for a reason. And now we know coconut flour doesn’t make a good roux. The good news is that making a roux with real flour is actually still pretty low carb (7 grams per serving). So I salvaged all the meat from last nights gumbo and tonight I’m doing a remix. It already smells and tastes amazing. I’ll still eat it over Cauli rice! #rouxmatters #gumbo .

INGREDIENTES (4 unidades)
4 huevos (¿Alérgico o intolerante? #aquafabaCarlayMafer)
50g de cacao en polvo
Endulzante al gusto (usamos 45 g de stevia @yoyfoods) 45ml de aceite (usamos de coco @ragalucia_mirandasingluten)
15g de polvo para hornear
45 g de harina (usamos de arroz, es sustituible)
70 g de chocolate oscuro #singluten
15 g, de vinagre

PREPARACIÓN:
1️⃣ Bate los huevos, añade el endulzante, el aceite, el cacao, polvo para hornear, la harina, el vinagre y mezcla hasta unificar. Precalienta el horno a 180 •C, funde el chocolate y agrégalo a la mezcla anterior hasta unificar.
2️⃣ Engrasa los moldes, vierte la mezcla del paso 1 y hornea de 20 a 25 min o 5 min de microondas. Desmolda y rellena.
3️⃣ RELLENO Y COBERTURA: chocolate oscuro y chocolate blanco, si puedes consumirlo, también podrías incluir otro relleno adecuado a tu dieta, pregunta la opción que podemos recomendarte. ¿CÓMO LOS RELLENO? Con ayuda del cuchillo o de un descorazonador de manzana remueve parte de la base del muffing frío. Rellena el agujero con el chocolate, tapa con el trozo que cortaste. Two things that I want to make clear is that 1️⃣ lifting weights will not make you bulky & 2️⃣ yes, ladies WE belong in the gym! ~
Whether you workout at home or at the gym, you should never be hesitant to jump right in! We deserve to be in the gym just as much as the “lifters”. I know how intimidating it can be right at first. I was a runner, didn’t think I should be lifting, & didn’t even know where to begin. Now fast forward two years later & its one of the best decisions I’ve ever made! 🤪

Lifting weights is something we should all be doing. Resistance training not only builds lean muscle mass, but also maintains the muscle you have. It makes you strong, confident & beautiful. Gone are the days of wanting to be “skinny”. I want to be proud & strong in my body and mind. Working out consistently doesn’t only make you stronger physically but also mentally. I am such a happier person after I get a good workout in, which always puts me in a winning mood, which makes me a better person. It’s never a bad idea to workout. Trust me. ~

Y’all, I’ll be putting this Balsamic + Fig Glaze on everything...SO GOOD!!!

Last night I cooked one of my favorite meals - Roasted Green Beans, Mashed Sweet Potatoes, and Pan Seared Crispy Skin Chicken Thighs.
I found some fig preserves in the fridge and decided to make a glaze for the chicken & it was definitely one of my best accidental creations to date.

I’ll have to recreate it to figure out the measurements, but here’s what was in it:
Balsamic Vinegar.
Fig Preserves.
Ghee.
Chicken Broth.
Coconut Aminos.
Salt + Pepper.
Sprinkle of Flour. ••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••
Cook Balsamic and Ghee low & slow until simmering. Add Fig Preserves, Broth and Coconut Aminos, whisk until combined. Add Salt, Pepper & Flour and whisk until thickens. Serve immediately.

One of my favorite quotes that I have found about being content with the length of this journey is the "transformation is a process, and as life happens there are tons of ups and downs." It's a journey of discovery - there are moments on mountaintops and moments in deep valleys of despair. But in the end it's about how far you've come and how far you're willing to go.
