I’ve been craving granola the last few days. I think it’s the thought of toasted, crunchy, lightly sweetened clusters mixed with cool, creamy and tangy yogurt. Something about a nice texture contrast makes my tastebuds happy!

But not all granolas are mad with good, whole, clean ingredients. So I made my own! This honey almond granola definitely hit the spot.

Honey Almond Granola
1 3/4 cups rolled oats
1/4 cup Greek yogurt
1/4 cup + 2 Tbl water
2 Tblsp honey
3 Tbl butter or coconut oil
1/4 cup almond butter
1/3 tsp salt
.
Preheat oven to 325F. Mix dry oats with water and yogurt. Let stand 15 minutes. Melt butter or coconut oil with honey and add to oat mix. Let stand 10 minutes. Add almond butter and salt last. Spread on tray and bake. Stirring every 15 minute until golden brown.

🧡ARROZ CON LECHE🧡

En estos días nublados a quien no se le antoja un arroz con leche ? Aquí te dejo una receta saludable y sin culpa ❤️.

✅1/2 taza de arroz blanco.
✅1/2 taza de agua .
✅1/2 taza de leche de coco .
✅ralladura de Limón .
✅1 raja de canela y canela en polvo .
✅2 sobres de stevia.
✅1 cucharadita de vainilla.
👉🏻enjuagar y dejar remojando el arroz como por 1 hora (opcional).
👉🏻poner a hervir la leche junto con el agua , agregar el arroz, la ralladura, la raja de canela y el edulcorante.
👉🏻dejar a flama media-baja aprox por 15-20 minutos y mover de vez en cuando solo para que el arroz no se pegue.
👉🏻servir y espolvorear canela en polvo .

Oui, chef, et plus particulièrement "healthy chef", c'est mon métier.

J'ai un parcours assez atypique, et la cuisine n'est pas ma formation initiale >> License de sociologie >> CAP esthétique >> CAP pâtisserie en candidat libre >> Formation aux techniques de "cake design" et ENFIN >> Formation en alimentation végétale/hypotoxique/sans allergènes.

Être spécialisée dans ce type d'alimentation ne signifie pas que j'ai une alimentation saine tous les jours, MAIS je possè les clefs pour y parvenir.
Aujourd'hui et grâce au #regimeig je comprends beaucoup mieux la synergie des aliments, leur impacts sur le corps, et la prise de poids.

Dans un futur assez proche, j'espère suivre une formation en diététique ayurvédique pour aller au bout de cette démarche de bien être.

I like #fermenting stuff and as a longtime #tobasco fan,
I quickly got into chilli ferments.
Tobasco takes years, 10 I think?
Chillis and salt packed into old bourbon barrels.. I couldn't imitate that.. But fermenting chillies is as easy as any other veg & you can make some awesome stuff in just a week or two.

I started making #srirachas with my first #lactofermented #chillis.

Delicious.
I would ferment supermarket fresh chillis in a lapsang tea brine (using 3.5% salt by weight)
for about 4 weeks,
drain most of the brine (but save it for cooking with)
add a good bit of #vinegar then blend, pass and boil down to consistency.
Sweeten it up with some honey.. Awesome

Eating it was a post work nightly ritual I practiced for months.
Sriracha with blue cheese, sauerkraut, ready salted crisps and the odd cold cut if i had any in (standard #healthychef diet)

But one day I bought the ‘wrong’ chillis for a batch
#dorsetnagas I think they were
and they caused all sorts of problems.
Immediate problems which I was sort of prepared for
but others that really endured.

Basically in the end it took weeks for my cat to come near me again and as a Sriracha it was inedible.
Unless youre a 100% masochist.. Great for adding instant fire to soups or sauces but not much use as a dip.
Not for me anyway.. So I started making this stuff instead,
Its basically ‘live fermented blackened pickled peppers and chillis with #lapsang and #toastedoak ’.
It makes a great addition to all sorts of stuff, as well as just being super tasty on its own or even whizzed up with the right vinegar into a mellow smokey Sriracha.

I don't normally make it with this much brine but I have a cunning plan 🙊 details to follow soon..

Questo piatto non è bello da vedere, ma volevo condividere con voi la ricetta di questa panatura che ho sperimentato oggi !
Per prima cosa ho marinato il petto di tacchino con olio, spezie e succo di limone. A parte ho preparato la panatura mischiando farina di mandorle, fiocchi di avena e paprika. Al forno per 20 min a 180 gradi.
Provatelo...era veramente croccante e gustoso ! Variare la preparazioni dei piatti con ingredienti salutari è il segreto del benessere !

Los huevos en casa son mis grandes salvadores, si hay huevos hay cena rápida, desayuno o postre en un plis plas. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Uno de los recursos que casi siempre tengo en la nevera son HUEVOS COCIDOS porque en un santiamén le dan el plus a una ensalada, un paté para untar o incluso para llevar de aperitivo.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Peeeeero ¿Cuál ha sido mi guerra con los huevos cocidos?⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pelarlos y que no se quede parte de la clara pegada a la cáscara. Uysss! qué cosa que me pone mal.⠀⠀⠀⠀⠀⠀⠀⠀⠀

De un huevo super grande y hermoso, se queda uno al que le faltan cachos, todo espachurrado y encima pequeño. Y eso 😱, con lo que me gustan los huevos, ¡no tiene perdón!⠀⠀⠀⠀⠀⠀⠀⠀⠀

👉¿Pero descubrí un truco para que eso no pase?⠀⠀⠀⠀⠀⠀⠀⠀⠀

📢Voy con el chisme: Para hacer la ensaladilla rusa, mi abuela ponía a hervir los trocitos de patatas, con las zanahorias y el huevo. Y al agua le agregaba un chorrito de vinagre, porque decía que así la patata quedaba firme y no se desmigajaba al mezclarla con la mayonesa. ¡Super Truqui!⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Y los huevos le quedaban perfectísimos.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Después de tanto renegar con huevos espachurrados, me di cuenta que quizás el vinagre era el elemento en cuestión que me estaba faltando agregar al agua cuando cocía los huevos.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
😬 Fíjate que era eso, así sin más misterios.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Si le agregás un chorro de vinagre al agua donde cueces los huevos, despegarás la cáscara con mucha más facilidad sin que se lleve cachos de clara cocida.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Y colorín colorado este truco sobre huevos se ha terminado.⠀⠀⠀⠀⠀⠀⠀⠀⠀

**WEIGHTLOSS TIP HEALTH TIP**
To avoid the bloat, try trading out thing like pasta/noodles and rice for things like lentils/sprouts and cauliflower rice (literally grated cauliflower).
This is my poached lentil stirfry. Simmer a piece of fish of your choice (I find white fish work best for flavour) in some water with a table spoon of garlic and a good pinch of cracked pepper. When the fish is ready to be turned, add your selection of chopped vege. The more colour the better. Add a table spoon of sweet Chili sauce and stir. I line my bowl with a bed of fresh sprouts, because I love the crunchiness, then add my vege and fish on top. For extra flavour/protien add a poached egg. Super easy, super fast, super healthy and super tasty!! .
