🍠 Purple Sweet Potato Hash & Avocado Dressing

Back to work & ready to get back into the kitchen👩🏽🍳 Really didn’t want to leave Cabo & come back to reality 😭 It was a beautiful place & I definitely recommend it 🏖 Got lots of sunshine & ate lots of delicious food 🌮 Here is a breakfast hash I made using purple sweet potatoes 🍳 with a super simple & easy avocado dressing 🥑
▫️1 medium Purple Sweet Potato
▫️1 small Zucchini
▫️Bell Peppers, cubed
▫️3-4 cloves Garlic, minced
▫️Spices - Chili Powder, Cumin, Smoked Paprika, Salt & Pepper
▫️Refried Black Beans
▫️2 Pasture Raised Eggs (@vitalfarms)
▫️1/2 small Lemon, juiced
▫️2 cloves Garlic, minced
▫️Salt & Pepper
▫️Poke holes in your sweet potato & heat in the microwave for 1 min. This will help soften it & make it easier to slice & let it cook faster. Slice into half moon shapes.
▫️Wash your zucchini & slice into half moon shapes. Prep your other veggies as well.
▫️In a pan, heat up some EVOO & add in all your veggies. Sauté for about a minute before adding in your spices. Cook for another 3-4 mins.
▫️Meanwhile, in another pan, cook your egg sunny-side up.
▫️In a small pot, empty out your canned refried beans. Add some chili powder, salt & pepper. Heat for 2-3 mins. Set aside.
▫️Avocado Dressing - blend all your ingredients together. I used my immersion blender.
▫️Serve your hash with the eggs, beans, & avocado dressing!
