Today I made an enormous pot of pasta for lunch. I made it creamy with some cashew milk, hummus and a drizzle of raw olive oil. I added lots of nutritional yeast, garlic, basil, some salt, paprika, kale, tomatoes and corn! It was basically just thrown together, and but to my surprise, everyone LOVED it! Especially Carlie and Kaden, they devoured it lol.
We still had tons leftover so instead of making another meal, I was lazy, and made everyone eat it again for supper 🤣 I made a huge salad to go with it this time.
We’ve been craving salads a lot lately and have been making them all the time! (Pretty much every supper post that I’ve missed the last few days was because we had salad instead of cooking lol) The kids love it, and Carlie and I have really been loving grated raw beets in our salads! She eats all of hers and asks for more!!! This was unheard of for us not long ago!
An example of a salad that we love is a full head of green leaf lettuce (I’ll never buy romaine again lol) a ton of baby spinach, a sliced bell pepper, thinly sliced onion, tomatoes (Carlie doesn’t love them and usually picks them out), a grated carrot, and a grated beet. We toss with some sea salt, balsamic vinegar and sometimes a bit of olive oil. But trying to cut back on that. I’ve found that with the beet in there, I don’t need any oil, but without the beet, a little oil is better, but obviously not necessary. Hubby doesn’t like the beet in salad as much because he thinks it’s too sweet 😆 lol
