I’ve been working on not having any food waste for a little while now. Sometimes it can get out of control when I don’t pay attention and some veggies may go to waste. I just try to be more conscious about it and once I notice our veggies are starting to get old I make a meal that includes those veggies. Today’s lunch was a perfect example of that. I had a bag of salad and half a cabbage that were getting old. So I decided to use it up and of course add some shrimp cause it’s quick to make! .

I’m excited to finally have ordered and received my first @butcherbox ! Grass-fed meat is so important if you care about your health AND the environment. It has a different fatty acid profile than factory farmed grain-fed beef. The grass-fed stuff is ANTI inflammatory while the grain-fed CAUSES inflammation. Also, when strategic grazing methods are used, raising grass-fed cows can actually remove some of the carbon from the atmosphere and store it in the soil (carbon sequestration). This is super important as other efforts to slow climate change have been less effective than they need to be.

☝🏼Grilled burgers made from @butcherbox #organic #grassfed #beef, spinach, tomato, #avocado, @foodforlife sprouted burger buns, and some bomb roasted potato wedges that didn’t make the picture. We drowned the wedges in rosemary, garlic, onion salt and pepper and they came out crispy and flavorful. 400 degrees for 50 minutes, flip them halfway. Have a great week!

Some days are just waaaaaay to hectic. When that happens, I have my go-to meals/snacks that require minimal time to make, and are still healthy and delicious.

For example, baked shishito peppers, with guacamole and chips.
.
I like to make a temporary baking pan out of aluminum foil to minimize the dishes needed to be cleaned afterwards. I drizzle oil over them, and bake them for 10-20 mins at 450F. This really depends on how close to the burner they are, and how many peppers you have. Just keep an eye on them. Squeeze a half a lemon afterwards, and coat them with some sea-salt, and you're good to go.
.
But, I really wanna talk about the guac and chips. The guac is already made. Pick some up from your favorite super market. I like to spice it up with lots of black pepper and sea salt. The chips, though, they are coconut chips.... Perfect for the keto and paleo folks. They're made by @therealcoconut . Check them out!

Yesterday I had the afternoon off so I got to enjoy lunch at home. I grilled up a salmon burger and topped it with some @chosen_foods avocado mail mixed with chipotle seasoning. It was on a bed if romaine and lettuce with a simple olive oil and lemon dressing, with some @manitobaharvest hemp hearts sprinkled on top. My roommate @ditchingdairy is trying out keto so I have been having some delicious keto meals to see how it makes my body feel. This one did not disappoint! .

Raspberry & Coconut Chia Puds.
Save this post for an easy high protein snack 🤤
Ingredients:
- 1/4 Cup Chia Seeds - 1 Cup Milk of Choice - 1 Tablespoon Shredded Coconut - 1/2 Teaspoon Vanilla Extract - 1/4 Cup Frozen Raspberries
How to:
1. Combine all ingredients (besides berries in a small bowl and mix well)
2. Place the raspberries in bottom of jar, then add in chia mixture. Cover & refrigerate for 2 hours or overnight.
3. Eat the fancy looking thing.
