The last few weeks were full on Soup Season, now it’s Stew Season (*says the girl who makes stew for the first time in her life) 😜

So, my first attempt at beef stew went pretty well. Seeing I’m that I’m pretty much the only person in the world who doesn’t have a @instantpotofficial or slow cooker and I somehow lost my dutch oven, I cooked this stew on the stove. It simmered away for 3.5 glorious hours. The end result was 👌🏾

As per every recipe make it was super simple and paleo 😉

Here’s how I made it…

Ingredients:

2 lbs beef stew meat pieces
2 tbsp coconut oil 
2 onions (cut in large pieces)
4 large cloves of garlic (chopped)
2 medium carrots (cut into medium thick rounds)
2 medium parsnips
2 cups kale
2 cups beef broth 
1 bay leaf
2 Tbsp thyme

Method:
1. Heat coconut oil over medium heat in large pot. Add beef and brown. Remove beef form pot.
2. Add carrots, parsnips, onion and garlic in pot. Cook for approximately 10 minutes
3. Add the meat back to the pot. Add bay leaf, thyme and beef broth.
4. Bring to a boil and then bring down to a simmer on the stove top (or if I ever find my dutch oven, place it in the oven at this point
5. Cook for 3.5 hours (or so)
6. Add in kale just before serving •

This is the Whole 30 Sloppy Joe recipe from the @therealfoodrds I have shared before! Last time I made them, I doubled the recipe and froze half! What a nice little treat to find these in the freezer and heat them up for a super easy and fast meal! My son had them on a regular bun, and I had them on these sweet potato buns! I have to say, my son was so excited because this has now become one of his favorite meals I cook! I don’t think he has any idea that they are healthy or anything like that!!! 💯🙌😜👏🤗

Take care of your body so that it can take care of you. Life is about experiences and food is an integral part of life that we want to experience, but we also want to pay close attention to how food makes us feel. Does it give us energy or take away energy? ~
Although I do love a good loaf of farmers market sourdough, I still find that I don’t feel totally awesome after eating it. In the past year I have come to recognize that MY body prefers a minimal amount of grains, regardless of how they’re prepared. Don’t get me wrong, sandwiches are my FAVOURITE kind of meal, and I would never say “I’m never eating grains again” - that would be a huge lie to you guys and to myself 😂 but what I will say is that I no longer include them as a staple. You’ll still see them pop up in my lunches from time to time, but the days of big quinoa bowls for lunch are no longer. ~
What symptoms arise when I eat grains that has influenced me to take a step back and minimize my intake? • fatigue • stomach aches • low mood
That being said, I will still be enjoying my farmers market sourdough every now and then because it’s the least offensive to my system and the enjoyment I get from it is pretty rad. ~
I truly believe that our bodies go through many changes, and we require different foods at different points in our lives to support us. Right now, my body is asking me to take it easy with the grains. So I listen. 🌱

I’m curious to here from you guys. Do grains work with your body or not so much? And if not, what do you substitute with for baking?
One more question: what’s your fav sweet potato toast topping?!
