Summertime means BASIL!! One thing everyone says about Basil, is the less you cook it, the better it is! It’s fragrance is more robust raw! That’s why one of our favorite no cooking basil recipes is...yep you know what we are going to say, PESTO!!
Check out our super easy recipe below and as always, let us know what you think!! What You'll NEED: -3 cups Basil, fresh slightly packed leaves
-2 tsp Garlic
-1 tsp Lemon, zest
-2 tsp Lemon juice
-1/2 cup Olive oil
-1/4 cup Pine nuts, toasted
-1/3 cup Parmesan cheese, grated
What'll You'll NEED TO DO
- Add the basil leaves, parmesan cheese, minced garlic lemon zest, pine nuts, lemon juice and, if using, red pepper flakes to a blender or food processor. Blend continuously until the ingredients start to breakdown. If you prefer a more coarse pesto, use the pulse setting. Stream in the olive oil and allow the ingredients to emulsify with the oil. You want to continue processing until the oil is combined with the basil and your other ingredients. Taste the pesto, add additional garlic or parmesan to preference. Add to a favorite pasta dish, brusetta, summer salad, list goes on and on!! ENJOY!
